Broiled Tilapia Parmesan

This was very good. I used Halibut because that's what I had but its a mild fish like tilapia. Besides that I made a few other changes, I used garlic powder instead of onion powder (I typically don't like onion powder), I added a 1/4 cup of panko bread crumbs and added 1/8 tsp. of paprika. My fiance who says he doesn't like fish, liked this. Yummy.

Italian Cream Cake I

This was EXCELLENT. I made this for a Christmas Evening dinner party. Risky move, since I had never made it before. Everyone went nuts over it! The only thing I did was double the frosting recipe so I could frost the entire cake and decorated the top of the cake with toasted coconut. YUMMO! Thank you Chantal.

Chocolate Crinkles II

These were excellent. Moist and delicious. I scooped out a tray full and then put the dough back in the fridge to harden up again. It took a little bit longer since I made them in shifts but the dough is easier to work with when it is chilled.

Lemon Bars I

These were really yummy and easy to make. The only thing is I don't know how you can get 16 bars of of this receipe...unless they are really small. But you don't need a big bar because they are the perfect combination of sweet and tart.

Cajun Chicken Pasta

This was excellent. I followed the recipe except didn't add mushrooms (don't like them), added a 1/8th teaspoon of cayenne to kick up the heat and used the juice of a 1/2 lemon to brighten it up a bit, a little extra salt and didn't use green onions, used a 1/2 sweet onion cut into strips.

Mexican Rice III

The rice was good but wasn't as great as the first time I made it. Not sure why. The first time it was outstanding but I think I made changes to it. I just don't remember them. I made this again and followed to a T...except added Knorr chicken tomato boullion instead of chicken bouillion. The rice definitely had a kick because of the jalapenos. I added more tomatoes and cilantro after it was cooked to add more flavor. Better than most restaurants. I just think I need to work on it a bit more.

Southern Peach Cobbler

This was good but not great. I love fresh peaches and was expecting something fantastic. After cooking the peaches they tasted like canned peaches. The topping was a little too sweet. I think I will end up sticking with fresh berry cobbler. The fruit taste so much fresher with a little bit of tartness.

Old Fashioned Onion Rings

These were very good. The only change I made was use panko crumbs instead of regular bread crumbs. They were very crispy, and not greasy at all. After making them I thought the batter could use some spices like garlic powder and paprika and cayenne just to give it a little more flavor. Then I read some reviews and someone else suggested the same thing. I haven't tried it yet but think that would do the trick.

BLT Wedge with Roquefort

I NEVER eat iceberg lettuce but made this for some picky dinner guest who ONLY eat iceberg lettuce. This was delicious. The dressing was great and it tasted like one of those Wedge Salads from a Steak Restaurant.

Chantal's New York Cheesecake

This is awesome. The first time I made it, it didn't crack and was absolutely perfect. The second time it cracked even though I did the exact same thing so who knows why. It didn't matter it was still delicious. On the cracked one, I made an icing of sour cream and powdered sugar. Hid the crack and gave a nice finish to the cake.

Chicken and Bacon Shish Kabobs

This was good. I did not use mushrooms. I think the only changes I would make next time would be to use fresh pineapple and to take some of the marinade prior to adding the chicken and cooking it down to make a glaze. And then use the glaze to baste the chicken in while cooking. I also didn't wrap the chicken with the bacon. Instead I threaded it like a ribbon around the bacon and pineapple. The bacon never got crispy but it was still good.

Bacon and Tomato Cups

I brought these to a neighborhood party and they were gone in minutes. Very delicious and easy to make. I used green onion and I used refirgerator Grands Flaky Bisquits. This is gone in the permanent recipe file. Thanks Tabkat.

Banana Sour Cream Bread

I've never made banana bread before and this turned out excellent. Really moist and delicious. I had to cook it almost 1/2 longer but that was not a big deal. I sprinkled the cinnamon sugar mixture all over the inside of the pan and then on top of the bread before baking. Really delicious. Freezes well.

Banana Cream Pie I

This pie was delicious. I followed the recipe exactly except I did not bake the pie in the crust. It didn't need it. I just put the pie together and chilled for several hours. I'm not sure why others were having a problem with "soupiness" because mine had the consistency of custard.

Citrus-Basil Vinaigrette

This dressing is excellent. Doesn't need anything changed. I made it about 4 hours ahead and strained out the basil right before serving. I put it on mixed baby greens, dried cranberries, tangerines, gorgonzola and toasted pecans. Excellent - thank you.
