Vietnamese Fresh Spring Rolls

Was so glad to see these, my son with wheat allergies gave these a super 5 high. I made them as the recipes states and also with a pork eggroll filling.

Baked Potato Soup

Sugar Cookie Icing

At first I did not think I had done this correctly, but the end result was fantastic! I had to add 2 TBLS. milk to get a good consistency, I don't know if that had to do with our high elevation or not.

Best Egg Rolls

The instructions were great, a fantastic springboard recipe. I used spicy ground pork and doubled the meat (I am surrounded by males in my family :) Everyone thought they were fantastic!

Paul's Pumpkin Bars

Cooked in jelly roll pan and iced them. All the pumpkin lovers in my family are enjoying this cake. I added all the regular pumpkin pie spices and used fresh pumpkin, very light and delicious!

Slow-Cooker Chicken Tortilla Soup

Slow Cooker Chicken Taco Soup

BBQ Pork for Sandwiches

Round Steak Sauerbraten

The meat was super tender, I used as many fresh items as I had on hand rather than dried, but did not change any ingredient. I used Tofutti dairy free sour cream to finish it off with. I served with rice to make it gluten free also!

Not sure what happened, followed the directions to a "T" and the cake fell in the middle. The only thing different is I cooked it in a convection oven.

Fantastic! I cooked 3X the amount and cooked at 325 for 2 hours after boiling for 45 minutes. I added liquid smoke 1 TBLS. instead of A-1 brushed right onto the ribs. These were eaten up...we kept a box of wipies on the table to keep our fingers clean!

Tilapia Soft Tacos with Chipotle Cream

These are fantastic!!! I did not follow "make sure to de-seed the peppers" part and they ended up super hot, so make sure to follow that direction!! Outside of my mistake these were easy to make and delicious. My family loves spicy so I will use the correct amount of chipotle, just w/out seeds next time! The one request of my family was to cut the fish in strips instead of one piece of fish, I'll try that next time. Can't wait to make again!

Texas-Style Baked Beans

For our palate they were a little sweet and not quite spicy enough. We will make them again with a tweak or two for sure. I used half the meat called for and thought it was the perfect amount for a side dish, or could leave it out and not miss for a side too.

Quick and Easy Green Chile Chicken Enchilada Casserole

The whole family loved this. Like others I used the large can of enchilada sauce and thought it was perfect. I made this dairy free by using Tofutti Sour Cream and soy cheeses and used corn tortillas to make it gluten free and it tasted great for the whole family. One dish wonders in our house are rare and I love it when I find a recipe that please everyones palate and meets everyones dietary needs.
