Spinach Pasta Salad
This has become a family favorite. My husband and three small boys eat it without complaint! I recently made it for a Birthday party, and everyone loved it. I always use more feta, less onion, and add a red or yellow bell, and sometimes chicken. It tastes great as posted, but if you want to tweak the dressing try using half a lemon and add a heaping Tablespoon of Balsamic vinegar along with 1 teaspoon of sugar.

Eileen's Spicy Gingerbread Men
These turned out delicious, not blah like many gingerbread men I have eaten. I did half the amount of cloves, and used 3 ounces of molasses instead of four, which seemed to take care of the sticky problem other reviewers had. A single batch of these makes about 12 5" gingerbread men, so you may want to double or triple the recipe if you are making big ones!

Malasadas
The first time I tried this recipe, I added more flour thinking that the dough was supposed be like bread dough. Do not do this, the malasadas were very dense. This being said, make the recipe as it is, the dough should be very sticky. I added 1/4c more sugar, and the malasadas were fantastic, fluffy, sweet, and golden brown, just like I remembered when I was a kid growing up in Hawaii! Yummm...
