Hmmmmmm.... I added tequilla like some other reviewers suggested and definitely improves this dish. Next time however I think I am going to shread the chicken instead of cube it so its more conducive to tacos.

Mexican Cucumber Salad

Fantastic Dish! I substituted fresh corn and tomatos instead of the canned ones ( i hate canned vegetables) and I thought it tasted fantastic!

Slow Cooker Chicken Cacciatore

It's alright. I thought the chicken was a little dry and the sauce was too watery. My wife loved it though so I guess this might be personal preferrence.

Corned Beef and Cabbage

Oh god lord this was like the best meal I have cooked in ages. I replaced half the water with Guiness beer and it was amazing. Not the healthiest thing in the world but totally worth eating.

Grilled Fish Tacos with Chipotle-Lime Dressing

Fantasic Marinade, the Sauce the Goes with it is not as good though. In fact I would just drop the sauce, marinade the fish, and simply make traditional tacos out of it in the future.
