Pressure Cooker Beef Stew

This is a great basic beef stew recipe....I made the following changes: canned beef broth for the bullion/water, 3 cloves of garlic(pressed), 2 sprigs of thyme, 1 TBS of dried parsley, and 5 meat soup bones. It is my new favorite beef stew recipe. Thanks for sharing it!!

Sunday Brunch Casserole

This was easy as well as tasty. I can not eat wheat...this is the only breakfast casserole I have ever seen without bread or a can of soup. I did omit the dill and bell pepper, I did add 4 oz of green chillies. Outstanding.

Tex-Mex Quinoa Salad

I made this according to directions..with one substitution..I could not find the cotija cheese so I used panella which is a crumbly farmers cheese. I also served this cold with butter lettuce in the form of a lettuce wrap..my vegetarian dinner guest devoured it and asked for the recipe. Another winner thanks!

Margarita Grilled Shrimp

I marinated this for 2 hours and cut the red pepper by 1/4, cooked it over mesquite lump charcoal...amazing!! My family devoured it. Thanks for a great recipe!

Mexican Vegetable Rice

This is a very good rice recipe. I did make the following adjustments. I used Garlic Powder instead of the Cayenne Pepper, I used canned stewed tomatoes (drain the liquid into a measuring cup and add stock to the required mark for the recipe. I also used cilantro instead of the parsley. This is a great side dish. My new favorite mexican rice..thanks for a great recipe!!

Orange Curried Chicken

I made this with boneless, skinless chicken breast, it was moist and delicious. For a easy clean up, line your pan with parchment paper or heavy duty foil as the sugar in the marmalade will burn to the pan. I served this with jasmine rice and a tossed green salad.

Kale and Adzuki Beans

This is a wonderful combination. I did use 2 TBS of soy sauce instead of the tamari to control the sodium content. It was filling and tasty. I served this with steamed Bamboo Rice and a salad.

Sesame-Crusted Tuna with Summer Salsa

An outstanding recipe. I used a sushi grade of Ahi Tuna and made the recipe exactly as directed. The flavors were very complimentary of one another. This dish presents very well for entertaining. I only regret that I ate it before I took a photo of it, to submit. Thanks for a keeper!!

Chicken Stir-Fry

I have made this one many times with consistent results...always excellent. The leftovers are gone the next day. I cook this one indoors on a stove-top griddle. The aroma is wonderful. Thanks for a great recipe!

Roasted Vegetables

This was an outstanding winter veggie recipe. I did not use the bell pepper. I did use fresh thyme and dried rosemary (don't forget it is only half the recipe for a dried spice). This would be a great side for ham or turkey. It's a keeper. Thanks for a great recipe.

Brian's Easy Stuffed Flounder

Excellent recipe. I did omit most of the butter. I did use 2 TBS for cooking the onion and celery, and used equal parts of chicken broth and reserved liquid to moisten the broth. The Old Bay seasoning was just the right flavor to finish this wonderful dish. Thanks for sharing a great recipe.

Lamb and Winter Vegetable Stew

An excellent lamb stew with lots of different flavors. Sweet, earthy, smooth and creamy. I prefer mine with more fresh ground pepper. This is definitely a keeper! Thanks for a great recipe! Make it gluten free use 6 tsp of Arrowroot Starch instead of the flour. Delish!

Cinnamon and Lime Chicken Fajitas

One of my regulars!! This one is a family favorite. The potatoes took longer to brown than the recipe stated, so start them first. I omitted the Jalapeño and used a chopped Chipotle in adobo sauce. I served it with sour cream, colby jack cheese, guacamole and a tossed salad. Yum!
