Portobello Mushroom Stroganoff

I trusted this recipe because of it's high reviews, but it does not warrant them. I did substitute plain yogurt for the sour cream - which I DO NOT recommend - but I cannot see that such a large amount of sour cream would taste much better. I will look elsewhere the next time I make stroganoff.

Delicious Ham and Potato Soup

This is a surprising and very excellent recipe. I used half a large onion, sauteed one clove garlic in the butter, and added bacon (6 strips) and cheese (1.5c) at the end in lieu of the ham. On the first round, it smelled far too much like clam chowder and only tasted so-so. HOWEVER, after reheating in the microwave the next day, it was one of the best potato soups I have ever had and my picky boyfriend agrees. I HIGHLY RECOMMEND this recipe and any variants to be cooked and stored for later use.

Swanson® Roasted Tomato and Barley Soup

This soup is intensely flavorful. I used real tomatoes instead of canned and less onion than called for. It would make for a nice appetizer or side dip, not so great as a soup.

Squash Soup

This recipe turned out Great! I never imagined that a yellow squash soup could be so tasty! I used summer squash we received from a neighbor and left in the seeds without any problems (they all pureed with everything else!). I also used some Monterrey Jack cheese to bring out the bell pepper. This recipe is amazing and a perfect way to use up a profusion of summer gourds!

Yellow Squash and Corn Casserole

This is a pretty good recipe! Very yummy! The only comment I have for it is that I wish I had used even more veggies. The mix takes up more space than anticipated and makes for uneven bites. Some are nice and vegetabley, while others are all strange batter-fluff.
