Almost No Fat Banana Bread

I appreciate this recipe because of the recent changes I have made to my diet. Every now and then, I still want something sweet. So, I can have this and not feel too guilty. I substitute Splenda for sugar with no problems for fewer calories.

French Toast Casserole

I doubled the recipe for a 9x13 pan and had to cook it for 60 minutes. It was still pretty mushy when I served it. We loved the taste, but the texture was off for us. We don't like our regular French toast mushy though, so that is just our preference. Next time, I will reduce the wet ingredients a bit and see if that helps the texture.

Mini Pineapple Upside-Down Cakes

I thought this was so yummy! I made it into a bundt cake because I lacked supplies to make the mini cakes. My only problem was that, because I followed the recipe, the brown sugar mixture that I put into the bottom of the pan was a little too much and it disintegrated the cake a bit. It still tasted divine, but the presentation wasn't everything I had hoped. Easily fixable problem for next time!

This was not good. At all. I don't know if it is supposed to be flat, rubbery and tasteless, but mine was. I followed the recipe exactly, and it was a disaster. Sorry, Mom, for your birthday cake :(

Irish Stew

This turned out pretty good. It needed A LOT more salt than the recipe called for. The only change I made was adding the parsnips with the potatoes, as other people suggested. With more salt, it was yummy.

Amazingly Easy Irish Soda Bread

I really liked the flavor of this bread. It was easy to make. I basted it every 10 minutes. I checked it at 40 minutes and my utensil came out clean. I served it and found the middle to be very undone. I think I should've flattened it out more before cooking and let it cook for at least 50-60 minutes. We were able to eat the outsides of the slices of bread, but the entire center was a waste.

Pot Roast in Foil

This flavor was fantastic! My roast was smaller than the recipe calls for, and so I kept a close eye on the time and still overcooked it slightly. The gravy made up for it though. I will make this many more times!

Chicken Breasts with Balsamic Vinegar and Garlic

This was very easy and tasty. Even my extremely picky 3 year old loved it. The only thing I didn't do was add the mushrooms because we're not fans, but I don't think it altered the true essence of the dish. We loved it!

Decorator Frosting

This is a good tasting, easy recipe. I thinned it out a little with milk to frost a 9" X 26" cake and it was just enough. It went on fluffy and hardened just enough to stay put. It did get a little soft and hard to pipe, but nothing a few minutes in the fridge couldn't fix.

Sour Cream Pork Chops

This recipe was easy and good. I followed it exactly - except the only chops I had on hand were thinly cut. The cooking time was a little too long and they were a bit dry - but the yummy sauce made up for it. They were extremely tender, and it tasted great served with rice.

Mouse's Macaroni and Cheese

I followed the recipe - except for reducing the pepper because we're sensitive to spicy-ness. It was easy to make. It tasted good for the first few bites and then it kinda got hard to finish. It was a little too cheesy. I think I'll play around with the amount and types of cheese and see if we like it better.

Chocolate Pretzel Rings

These taste good and look cute. I used small pretzel twists and they did not work well. I placed the kiss in the middle, where the twist is and as they melted, they fell off to one side and didn't fill in the center when I placed the M&Ms on them. I think the pretzel rounds would've worked much better. Also, watch your melting time. You might want to try one at a time until you figure out what works best with your oven. If you keep them in then oven a little too long, the chocolate goes everywhere and there is nothing to puch the M&M into. I made these for a baby shower for tomorrow and I'll use them, but they aren't as pretty as I would've liked. But, with a few modifications, I think they'll work perfect next time.

Coconut Cream Pound Cake

This was an ok cake. I doubled it and put it in two jelly roll pans, plus a 9x9 pan. I cooked it for 45 minutes, which was too long and it came out very dry. The flavor was good though, I just had high expectations. I also paired it with the chocolate coconut cream cheese frosting from this site, and it was way too much coconut and cream cheese flavors together. Next time, I'll frost it with something else and watch the cooking time more closely.
