When I try a recipe, I follow it exactly. I like to give it a shot before I make modifications. This also makes my reviews fair, as I am reviewing the actual recipe and not my version of the recipe.

Almost No Fat Banana Bread
I appreciate this recipe because of the recent changes I have made to my diet. Every now and then, I still want something sweet. So, I can have this and not feel too guilty. I substitute Splenda for sugar with no problems for fewer calories.

French Toast Casserole
I doubled the recipe for a 9x13 pan and had to cook it for 60 minutes. It was still pretty mushy when I served it. We loved the taste, but the texture was off for us. We don't like our regular French toast mushy though, so that is just our preference. Next time, I will reduce the wet ingredients a bit and see if that helps the texture.
