Pumpkin Cake II

The cake was very moist and turned out beautiful. I followed others' suggestions and reduced the sugar to 1/2 cup and used an entire 15 oz can of pumpkin. I don't really care for pumpkin, but my family enjoyed it for Thanksgiving. Not too sweet. I used a rum cream cheese glaze, which can be found as part of another pumpkin cake on this site.

Holiday Pumpkin Cake with Rum-Cream Cheese Glaze

This review is for the glaze only - The consistency of this glaze was incredible! It stayed exactly where I wanted it. I ended up adding no more than 1 extra tsp of milk, a few drops at a time. The flavor was also really good. My family really enjoyed it on a pumpkin cake (different recipe). I would definitely use this glaze for other cakes and vary it with vanilla or almond extracts.

Cinnamon Coffee Cake II

This cake is amazing! I think I could live off of it! I made it exactly as the recipe says, except the nuts. I made it in a bundt pan and cooked 20 min at 350, 40 min at 325. After cooling in pan 10 minutes, it came out perfect. Next time I would try using two packs of butterscotch pudding as I couldn't really pick out that individual flavor. YUM!

Honey Bun Cake I

This cake is AMAZING!!! It is now my new favorite cake. So good and so irresistible! I baked mine in a bundt pan for 45 minutes. I also added some of the cinnamon/sugar mixture in the pan before pouring the batter. When using a bundt pan, you can half the icing recipe. I poured a majority of the excess in the middle whole, but it was still a ton. Everyone loved this cake!! It definitely tastes like a mixture of honey bun and cinnamon roll! YUM!!

Stuffed Jalapenos III

I was somewhat disappointed in these. They were good, but nothing outstanding. I love fried jalapeno poppers, but I was trying to make this somewhat "healthier" version. Maybe I am just biased towards the fried type. We ate them, but I probably would not make again.

Creamy Au Gratin Potatoes

This recipe was very good and I would make again. My milk mixture didn't seem to thicken very much. I was worried that it may be too soupy even after it baked, but it thickened up pretty decent after cooling a little. My boyfriend also loved it!

Amaretto Cake

This cake is AWESOME! My family pretty much devoured this cake in a day. The inside is so moist and delicious. The only change I made was to double the almond extract. I had planned on making an additional glaze for the top, but it is so good on its own, there's really no need! It is so quick and easy to make since the base is a box cake mix. The soaked in Amaretto is definitely the key to this cake! Update - I have made a similar version of this cake twice in the past week for friends' b-days. I substituted chocolate cake mix (regular and devil's food), chocolate pudding, vanilla extract, and Kahlua. They both turned out so good! I would suggest doubling the extract and adding a bit more Kahlua (no more than extra 1/4 cup) for more flavor. My friends loved it! Such a great recipe and very versatile!!

Awesome and Easy Creamy Corn Casserole

Very good!! I followed the recipe exactly, and since I only had a 2 quart baking dish cooked for 50 minutes. The texture was very good (firmer on top, creamier in middle) and everyone loved it. Will definitely make again!

Italian Pasta Salad I

This recipe was very good. I mixed all the ingredients together to let them sit while the noodles were cooking. I also sauted the bell peppers in 2 Tbsp butter since I don't care for the crunchy texture. I also omitted the onion b/c I don't like them. The pasta was good at both room temp and the following day right out of the fridge. I think the flavors tasted even better the next day. Would def make again!

Waffles I

This recipe was very good! I followed the suggestions of others by doubling the vanilla, doubling the sugar, adding 1/2 tsp cinnamon, and separating the eggs. I whisked the egg whites until light and fluffy and folded in last. I also used a hand mixer. The batter seemed thinner than a typical box mix, possibly b/c of the hand mixer. May work just as well using a whisk. The recipe will make at least 5 full size waffles and probably 6 if none of it ran over the sides (thin batter). The result was light and fluffy pancakes! They tasted very good and my friend said they were "the best waffles he ever had." I definitely think the cinnamon and vanilla are the key ingredients. I also noticed that the waffles are crispier if you don't spray the iron with cooking spray. If you like softer waffles, spray it every other waffle made. I also added chocolate chips to a few - Yum! Batter works great stored over night as well.

Rick's Special Buttercream Frosting

This recipe was very tasty!! I used 1 cup butter flavored Crisco, 1 cup salted butter, and only 6 oz of whipping cream. I refrigerated the buttercream and put it in a pastry bag with 1M decorating tip to make the stiff cupcake swirls. The swirls did good, but had I not been in Biloxi MS in 100+ degree temp and had more time to refrigerate it would have done better. I added a few drops of food coloring to make pink, purple, green, and blue colors. The flavor was so incredible, and all the kids at the party just licked it off the top of the cupcakes.

Caper Baked Chicken

I was very disappointed in the outcome of the recipe. I was skeptical at the ingredients then even more skeptical once I put them together. They didn't seem to go together. I gave the recipe 2 stars b/c it was edible, but something I would never choose to eat. I dipped the chicken in steak sauce to mask the flavor.

Garlic Chicken

This recipe was very good!!! I was only making 2 chicken breasts, but still used the same amount of ingredients - I just poured the extra on top and really covered them thick with the bread crumb mixture. The chicken was so juicy and incredibly tender. I also added just a little more than 1/4 cup of Parmesan since I really like cheese. Next time I will probably try using Italian dry bread crumbs. Can't wait to make again!

Cake Balls

Although time consuming, these are very good! I followed the suggestions of the top reviewer with the exception of the toothpicks (which didn't work out so well). Making the balls that way is an all day project. Using a hand mixer on low for about 20-30 seconds definitely helps mixing the cake and frosting. The only problem I had was my melted chocolate bark not staying smooth long enough to coat all 56 balls. I tried adding a few squares at a time and managed to get 40 done. I also ended up using 9 of 12 squares of bark. The recipe calls for 3 oz, which would cover like 5 balls. I also used devil's food cake mix and whipped buttercream frosting - delicious!!

Buffalo Chicken Rolls

These turned out really good! I would give the recipe 4 stars alone, but after dipping it in some ranch combined with the leftover hot sauce mixture in the pan it is definitely 5 stars! I used both provolone and pepper jack cheese. Both were great and I couldn't really tell a difference.Also, completely carb free and not too spicy (when usuing Louisiana hot sauce) for those of you who don't like real spicy.

Chocolate Chocolate Chip Cookies I

These cookies were good, but I would bake them different next time. I followed some of the other suggestions and used 1/2 cup butter and 1/2 cup shortening. Every time I tasted the batter I thought, "Gross" b/c of the shortening flavor. It kinda ruined it for me even after the cookies were baked... it was like I could still taste the underlying shortening flavor. Next time I will use the 1 cup of butter as the recipe indicates. I also added about 1 cup dark chocolate chips and 1/2 cup white chocolate chips - this definitely saved the recipe and gave it the 4 stars.I also only baked the 8 minutes so they would remain a little gooey!

Candy Corn Bark

This is good and addicting! I changed the recipe slightly since I don't care for raisins. Instead, I used 1 cup Peanut M&M's. 1 cup of candy corn is plenty. Had I put the additional cup on the top, it would have been completely covered. An easy way to break the chilled chocolate - set it on a cutting board, hang small piece off over the edge (table underneath), hold chocolate down with one hand, and press down on the piece that is hanging off over the edge. I did this with wax paper on top and bottom of chocolate mixture so as not to get my hands all over it. Much easier than attempting to cut with a knife!
