Chocolate Bourbon Pecan Pie

Reviewed: Sep. 5, 2011
This pie was delicious!! I left out the bourbon since I made it for a church function. I also followed other reviewers' suggestion and added 2-3 oz chocolate chips as a bottom layer instead of inside the batter. It fit perfectly in a deep dish pie plate and baked beautifully on the 2nd to lowest rack without burning the top or bottom. Next time, I will make a homemade crust using the "Irresistible Pecan Pie" recipe since it is better than the frozen type. Can't wait to make again and try the bourbon version!

Irresistible Pecan Pie

Reviewed: Sep. 5, 2011
This pie was delicious and I'm just starting to like pecans. As others suggested, I added 1.5 tsp vanilla and 1 Tbsp flour to the batter. I baked in a deep dish pie plate on the 2nd to lowest shelf, but had to cover with foil in the last 10-15 minutes to avoid burning the top. Next time, I plan to bake at 325 instead of 350. I baked a chocolate pecan pie at 325 the same night and it came out perfect without having to cover it.

Chocolate Cherry Cake with Rum Ganache

Reviewed: Jul. 18, 2011
I thought this was a really good cake and that was before any topping. I Love chocolate and cherry together! Since I was unable to taste the full size cake, I made myself a cupcake size... the cake was fluffier that I expected. Changes - I folded in the cherries with the chocolate chips. I also used the Satiny Chocolate Glaze recipe on this site (replacing vanilla w/ 1 tsp rum extract) instead of the ganache simply b/c I knew it would dry semi-hard and I needed that for wrapping it up for travel. I would love to try the ganache next time. Will make again!

Cappuccino Muffins

Reviewed: Jul. 18, 2011
I loved these muffins and I'm not a coffee drinker! I made the recipe exactly as written. The topping was a little difficult to work with... hands on seemed to be the best approach. While baking, the topping melted right into the top of the muffin. When I make these again, I may add more chocolate chips (since I'm a chocolate lover) and a tad more cinnamon. Delicious!!

Strawberry Bread

Reviewed: May 13, 2011
The flavor of this bread was very good. However, mine was basically raw in the middle after the cooking time. The toothpick test didn't detect it either. Even though it wasn't completely cooked we still ate it... kinda like eating cookie batter! I will try again!

Bada Bing Bada Banged Potatoes

Reviewed: May 13, 2011
My family loved this recipe! I made as directed, except I forgot thyme leaves. Next time I plan to cut the red pepper flakes to 1/2 tsp. The potatoes weren't spicy unless you bit into a piece that had a ton of seasoning on it... then it would set your mouth/esophagus on fire. These smell so delicious when baking as well! I also made about 4 lbs... still a TON of potatoes!

Anniversary Chicken I

Reviewed: May 13, 2011
This first thing I heard from my family's mouth was "Amazing!" This dish was very good! I made as directed except I used real bacon (10 slices, microwaved, then chopped).

Donut Muffins

Reviewed: Dec. 13, 2010
I thought these were pretty good, especially the outside coating. I wasn't a huge fan of the nutmeg inside. I may would try cinnamon and vanilla flavoring next time. I didn't have mini muffin pans, so I made 11 of them in a mini fluted Bundt pan tin. They had the hole in the center and looked like real donuts! Very cute. Update - After eating a few of these, I discovered the that ones that soaked in butter the longest (getting ready for the sugar coating) were by far the best tasting ones!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Dec. 13, 2010
I thought these were okay... nothing spectacular. I was expecting a lot more. I didn't think the cookie dough flavor was very strong even though I did big pieces inside each. The cupcake itself was very moist and had a great texture. I think they would have tasted better with a chocolate flavored cake mix.

Buffalo Chicken Dip

Reviewed: Sep. 29, 2010
YUM!!! I made a half recipe of this, and we devoured it! I used low fat cream cheese and ranch and it still tasted great. After the crock pot, I poured it in a glass loaf pan then served with with Hint of Jalapeno tortilla chips. So good!

These were okay. I LOVE regular chocolate chip waffles, so I was hoping for more. I also added chocolate chips to mine.

Kitty Kat Bars

Reviewed: Aug. 25, 2010
These don't taste like Kit Kats, but are still very good if you like butterscotch! I also used Keebler Club crackers as others suggested and crunchy PB that I had on hand. I put them in the fridge for an hour to cool before cutting, but the chocolate was still too soft. I then put them in the freezer for about 45 minutes - much easier to cut in to. My only problem was that the gooey part seeped below the bottom cracker layer, which caused them to be sticky on the bottom when stacking. I was hoping for a nice cracker bottom.... oh well, still delicious! I would probably rename these as Butterscotch Bars in my recipe book.

Creamy Peanut Butter Fudge

Reviewed: Aug. 25, 2010
I didn't have time to read all the reviews, so I just followed the recipe exactly. I had my stove set on medium (5 of 10). After waiting 20+ minutes for it to boil, I decided to turn it up to 6 then almost to 7. It finally started boiling, so I reduced the heat back to 5. I stirred the entire time, 30+ minutes. I immediately added the other ingredients as directed then let it cool over night. I cut into it this morning... it was a little soft, but nothing that couldn't be firmed up in the fridge. I put it in the freezer for maybe 10 minutes then cut it up easily. I also attribute some of the softness to the horrific Alabama humidity. It tastes Amazing!!! The recipe also makes a ton! Very thick even using a 9x13.

Boudreaux's Zydeco Stomp Gumbo

Reviewed: Aug. 19, 2010
I thought the flavor of this Gumbo was very good! However, there way too much broth in it. If I make it again, I would probably use half the amount of broth. For leftovers, I ended up draining it into a colander and catching the juice in a bowl. I got the good stuff out of the colander then just added some of the juice back.

Kentucky Butter Cake

Reviewed: Aug. 19, 2010
I loved this cake! It turned out very moist, especially where the butter sauce had soaked in. I'm glad my brother took it back to school with him because I couldn't stay away from it. I followed the recipe exactly and it turned out beautiful!

Colleen's Slow Cooker Jambalaya

Reviewed: Aug. 7, 2010
This Jambalaya was so good! I didn't have time to use my slow cooker, so I pre-cooked the chicken, shredded it, then threw everything in a stock pot. I left out the shrimp since I don't like seafood. Ours was very spicy and very good!!

Chocolate Peanut Butter Marble Cake

Reviewed: Jun. 11, 2010
The cake was very moist and good, but it did not have a strong PB or chocolate flavor. I would have definitely liked to have tasted more peanut butter and a richer chocolate. The consistency of it was very nice though and baked great in a Bundt pan for 50 minutes. I also added the "Satiny Chocolate Glaze" to it.

Satiny Chocolate Glaze

Reviewed: Jun. 11, 2010
This is an great chocolate glaze for Bundt cakes. For consistency, I give it 5 stars, but for taste I would give it 4 starts. It's good, but I like it really sweet. The glaze is great because it's not so thin that it all runs off the cake. It's thick enough to form it the way you like. It's also dries semi-hard and keeps a nice gloss.

Mexican Chicken Corn Chowder

Reviewed: Jun. 5, 2010
The soup was delicious! My mom and I loved it! The half and half gives it a nice creamy texture. The soup is just as good re-heated and may be slightly spicier. I followed the recipe as directed with the exception of omitting the onion.

French Toast Waffles

Reviewed: May 29, 2010
These waffles were average. I love both French toast and waffles, but I guess not together. They weren't bad, but I probably wouldn't make them again. The batter made two full size waffles with barely any left.
