Born in 1955...IT consultant...VSAM (virtually single, actually married)...somewhat handicapped due to MS. Looking at the "Hobbies" section, I see that none of them actually apply to me. My real hobbies are beer tasting (yes, beer is as complex as wine) and amateur theater.
My favorite things to cook
Chicken, salmon, pork chops, with southern U.S, or Japanese-inspired recipes. Yes, that's a strange combination.

Alternative Baked Salmon
I'm still not entirely sure what this is supposed to be an alternative to, but I will say it is very good.

Campfire Green Beans
I seldom make snap beans, as I don't care for the texture. These, though, were very superior!

Oven Baked Herb Chicken
I did not encounter the gumminess problem. This may be because I eschewed the salad dressing mix for 1 Tbsp. dried minced garlic and 1 Tbsp. grated Parmesan; perhaps there is some ingredient in commercial mixes that becomes gummy when baked. I also baked the chicken for only 45 minutes, as I felt that 60 minutes would dry it out too much. The resulting chicken was strongly flavored; quite garlicky, but with a noticeable flavor and tang from the cheese. I like these strong flavors, although I concede that my tastes are not everyone's. All in all, a satisfying dish.
