About this Cook
I work as clerical support in an insurance office. I live and take care of my Mother who has recently been put on a low glycemic nutritional plan, as she calls it, I think she doesn't like the word diet.
My favorite things to cook
Anything and everything. I am experimenting with tilapia recipes as well as beans, lentil and barley. I love to cook italian foods and anything with beef or chicken. Baking was my passion but it's caught up with me by way of my hips! My boyfriend has me on a caramel or blueberry dessert kick. He loves both. He eats like a horse and I am only too happy to enable this 'behavior'. My current mission: Find the ULTIMATE Perogi recipe.
My favorite family cooking traditions
"Boiled Dinner" Corned beef brisket, slow simmered with potatos, cabbage and carrots. Country ribs with saurkaut and potatos. Brownies, with ever imaginable addition from chips to pecans and marshmallows. Blueberry cobbler, cookies and anything you can grill.
My cooking triumphs
Dinner for 10 for my first thanksgiving. Roasted hazelnut stuffing in the turkey (see tragedies below) with slow simmered cranberry orange relish and green beans sauteed in bacon. Easter lamb... I've submitted my grand mothers recipe. Blueberry cobbler, I used "Best Every Blueberry Cobbler" listed here on this site. Thanksgiving 2007 I made it twice in one week, NEVER have left overs, usually run out and it's My boyfriends fav. Can't go wrong with that.
My cooking tragedies
Thanksgiving dinner: I didn't thaw the turkey long enough and it wasn't ready until 3 hours after I planned serving! But it did turn out very moist!

Peanut Butter Cookies IV
Not too sweet and very peanut buttery. I can't keep enough of these in the jar. I added a quarter teaspoon of cinnamon; a family favorite spice and they are perfect!

Hearty Split Pea Soup
This was a good soup. Less flavorful than other's I've had. I may add a bit of salt or use smoked ham hocks in the future. Served with a hearty bread, like Irish soda or a Wheat it's perfect on chillier days.

Truck-Stop Buttermilk Pancakes
These pancakes are fluffy and flavorful. I added a bit more milk as the instructions suggest to make the batter slightly thinner than measured ingredients. I have made zip locked bags of the dry ingredients with the measurements of the wet (egg, milk, etc.) for quicker future breakfasts. Store any unused batter in a sealed container. I haven't used thawed, frozen batter yet. We'll see if the results are the same. These are now the staple, replacing store bought mixes.
