Easy Red Beans and Rice

I have made this recipe a few times and we always love it - even my kids. I substitute a can of pinto beans and black beans instead of kidney bean (personal preference) and omit the green pepper. I didn't have flavored tomatoes so I just added a tsp of cajun seasoning.

Sweet Potato Pear Bake

I'm happy to be the first to rate this recipe....it is delicious! What an interesting (and slightly sweet) combination. I put a little extra cranberry sauce on it because I like that. It's a great way to get kids to eat fruit AND vegetables!

Lemon Cake

This has become one of our favorite cakes - it is outstanding! I used a lemon cake mix (the "supreme" kind) and it wasn't too lemon-y. It's hard to resist!
