Chicken Enchiladas II
Great recipe! I used dark meat turkey instead of chicken and topped the enchiladas with slices of avocados, salsa verde, and fresh cilantro.

Freeda's Fabulous Fish
Very good! Definitely cut back on the butter. I doubled the recipe into a 13x9 glass baking dish.I had a red bell pepper that needed to be used, cut it into strips and used one lemon and one lime. Everybody loved. Next time I am going to cut back on the baking time.

Raspberry Kielbasa over Cheese Grits
Great recipe! Most of my friends are musicians and I feed them after the gig or the next day after we drag our #&*!@ out of bed. The 2 changes I made were to cut those slices in half (halfmoons) and I use the instant cheese grits and add extra cheddar cheese. My friends tell my husband that I am the ROCKSTAR now!
