Winter Fruit Salad with Lemon Poppyseed Dressing

I made the dressing first and almost stopped to review this recipe as soon as it was done becasue the dressing alone makes this a 5-star recipe! This was SO good! My new favorite salad recipe. I used toasted pecans and left the peel on the apple for prettiness. I also used a spring greens salad mix and threw in some leftover spinach I had on hand. I also served the dressing on the side so I could keep the leftovers. You will end up with WAY more dressing than you need, so you might as well just double the salad ingredients - it's so good you'll want more anyway!

Quick Quiche

This was tasty and easy. I didn't pay attention to the pan size and ended up using my 8-in. pie plate instead. I increased the baking time by 10 minutes and it was perfect. Can't wait to try it again with other veggies and cheeses!

Magic Peanut Butter Middles

These are SO fabulous! I followed the recipe except for adding a couple of tablespoons of milk to my chocolate dough, as it was a little dry, and they turned out SO GOOD! I flattened the chocolate dough out in the palm of my hand, and since I wanted the chocolate dough to be even around the filling, I made the edges thinner than the middle because the edges ended up overlapping when I wrapped them around the peanut butter middle. I also rolled them in sugar and just flattened them slighty with my hand. So amazingly fabulous!

Pineapple Chicken Delight

Easy and yummy. My five-year-old loved it, which for me, is always a huge bonus. (So did my 11 month old, but she'll eat anything!) I thought the potatoes, which I sliced VERY thin, were just a TINY bit undercooked, and I didn't love them coated in BBQ sauce, so next time I might just do them separately or make some rice instead. But the flavor of this was quite tasty and the chicken was moist and delightful.

To Die For Blueberry Muffins

Delightful! I doubled the recipe and made 12 jumbo muffins (filling the muffin tins all the way to the top of the pan) and then 5 more regular sized muffins. They are beautiful and tasty and I love them! The struesel topping adds the perfect touch! Yum!

Black Beans and Rice

I made this as a side dish for tacos, and since it was so tasty, ended up using it as a filling for my tacos too! It was really good. I used roasted garlic tomato sauce and it ended up needing a little more juice so i threw in about a fourth cup of salsa too. I also added about 1/2 cup frozen corn, a teaspoon of cumin, and a little salt. I mixed the leftovers with my leftover taco meat and I'm excited to eat it for lunch today!

Burnt Butter Frosting

I made banana cupcakes from an old family recipe and it didn't have the frosting recipe on it! I found this one and it was just what I was looking for! A half recipe was plenty to frost about 30 cupcakes.

Chantal's New York Cheesecake

Perfectly fabulous, creamy, smooth and beautiful! Even after my stupid water bath leaked through the foil into my pan and made my crust all mushy, it was awesome! I topped it with a shiny chocolate ganache and sliced strawberries. I can't wait to make it again and taste it with an un-mushy crust.

Pineapple Rice Casserole

Andrea's Pasta Fagioli

I really love soup and liked this recipe better than another pasta fagioli recipe I tried earlier this winter. I added about a half pound of browned hamburger since my husband requires meat to be in his supper, and subsituted a can of chicken broth for 2 cups of the water. I also used 2 cans of diced tomatoes and one 14 oz. can of tomato sauce instead of only the tomato sauce the recipe calls for. Served with cheesy garlic bread, it made a tasty supper!

Chicken, Stuffing and Green Bean Casserole

This is good, filling, and quick and easy. I threw in boiled leftover chicken I had in the freezer, and used herb flavored stuffing. It was a good, easy weeknight meal.

Chicken Noodle Soup

Good soup. I use the "boiled chicken" recipe from this site, replace the water with a mix of the stock from boiling my chicken and canned chicken broth, add a little garlic, and use Reames frozen egg noodles, because they are hearty and taste homemade. My four year old son loves when I make this!

Chicken Enchiladas I

Mmmmmmmm, delicious! I left out the whole tomato sauce, water, green pepper, etc. part and just stirred in a small jar of salsa instead. The filling is so fabulous! And instead of taco sauce, I dipped my tortillas in warmed enchilada sauce, filled and rolled them, and topped them with what was left of the sauce and cheese. They were soooo good!

Almond Chicken Casserole II

This was hearty and comforting. I used 3/4 cup of mayo and 1/4 cup of sour cream, and just the one can of cream of chicken like the recipe calls for, despite the many reviews calling for 2 cans of soup, and mine wasn't dry at all. I boiled chicken breasts and thighs with celery, carrot, onion, and garic, and used the broth to cook the rice in - it was very flavorful, and even my husband, who hates celery, loves this, which I thought was funny since celery is a main flavor in the dish!

Sopapilla Cheesecake Pie

So very, very fabulous! And easy too! I made this for a church dinner and came home with an empty pan and many requests for the recipe. I only used a half cup of sugar with about a teaspoon of cinnamon for the topping, which was plenty, and I melted the butter and brushed it over the top of the dough before sprinkling on the topping. I also served it refrigerated, because I like cheesecake cold. YUM!

So good and easy! When I'm excessively lazy, it's even good with my Kraft Raspberry Vinagerette Dressing! And if I have them, I throw in a small can of mandarin oranges.
