About this Cook
What can I say I love to cook and entertain. I have a family of four (17 if you count the in laws ) and pretty much cook at all the family events. We also do most of the hosting and I think it's great to have a lot of people over and see the satisfaction on their faces after they have had a great meal. It was our sons high school sweetheart (Rachel) that introduced me to this site 8 yrs. ago (her mother uses this site alot) and I didn't wise up and join until 06 when just peeking in and printing recipe's wasn't enough.
My favorite things to cook
BBQ has always been my favorite. It just seems to bring everyone together and I just enjoy feeling like a pit master. But by far hosting and preparing the holiday meals is just the thing that makes me feel good. Preparing the turkey, ham, sweet potato casserole, prime rib (for Christmas) are by far my favorite's.
My favorite family cooking traditions
Holiday dinners. There is just nothing better than having family around you during the holidays. I told my wife years ago that when it comes to the tradition of holiday dinners that we need to carry that torch. And besides I really enjoy hearing the compliments and seeing the smiles on everyone's faces. Isn't that what the holidays are really about.
My cooking triumphs
I believe the biggest cooking triumph I ever had was when I was 17 years old and decided to make a chicken cacciatore recipe I found in some cookbook. It came out great! My family was totally blown away and couldn't believe that I made it.
My cooking tragedies
Well this one is easy. One time when I made an apple pie I accidentally sprinkled cumin on top of the pie instead of cinnamon. Boy it"s kinda funny my son to this day will not let me forget that. Good thing it happened early in the day. And yes I was able to get to the store and repurchase all the ingredients in time to make another pie for desert that day. Did I mention it was on Thanksgiving and thank God Albertson's was open till 3pm.... :)

Banana Ice Cream Shake
I live here in Winter Park Fl. and on a hot day (or cold) this is an excellent drink to make. An awesome drink ur kids will enjoy.

Old Fashioned Coconut Cream Pie
You know I once tried to make a coconut cream pie from a cool whip and jello instant pudding recipe and it came out awful. I mean it was beyond awful. A mud pie from my backyard would have tasted better. It was watery and I will never ever attempt to do it again. NOW THIS RECIPE IS TO DIE FOR!! I followed the directions as followed and made my own whipped cream with powdered sugar and a half pint of whipping cream. My son and daughter and a few friends really enjoyed this and could not believe I actually made this. Thank you Carol an outstanding recipe, truly enjoyable. 5 stars is not enough. :)

Captain Crunch Chicken
Okay guys I got it. This recipe rocks!!! I read some of the reviews on this recipe and the one thing I noticed is when people said that they had a problem making the captain crunch stick to the chicken. Well I solved it! On this site there is a recipe for oven fried chicken. the recipe calls for crushed ritz crackers and mayonaise, yes mayonaise. Well after cooking it I found that it really makes sense. Mayo is an oil and it helps the crushed crackers stick to the chicken. Well that is exactly what I did here. I crushed the captain crunch in a blender and coated the chicken (bone in)with the mayonaise and then coated it with the captain crunch and basically oven fried it like shake n bake for 45 min. and BAM! there you got it, captain crunch oven fried chicken. The flavor it incredible, if you choose to make this, do like me and get past the mayo, make it and enjoy it. Trust me your family will love this.
