This is the best peanut butter cookie I've ever had, and I love peanut butter cookies. They are moist, chewy, and substantial without being heavy. I used Adams pb, whole wheat pastry flour, and baked for 10 minutes. The dough gave me 3 dozen cookies.

Pecan Pie V

Really good. Toasted and ground 1 c pecans and added them to the mix (on top of the 1 c pecans already in the recipe) and used the baking trick that everyone else has talked about. Best pecan pie ever! Could cut the sugar a bit, especially with the toasted pecans to add body.

Pecan-Oatmeal Pancakes

These were great! Had to use chopped almonds in lieu of the pecans, and added a little almond extract to boot. We loved them.

T's Sweet Potato Fries

These were delicious! I cut them thinner and omitted the lemon pepper, but we sure enjoyed them. Don't expect them to taste like french fries or have the exact texture and you will be pleasantly surprised by the results. We used thousand island dressing as a dip.

Kheer (Rice Pudding)

kheer is supposed to be more liquid-y than traditional rice puddings! It's not meant to feel like a log sitting in your stomach.

Baked Spinach

This is wonderful! I used up the rest of my eggplant and green beans, added 3 more eggs (this was our main course), feta, and red pepper flakes for a little kick. The cheese/breadcrumb mixture crisps nicely and adds lots of flavor. Thanks for this.

Ratatouille

My husband and I LOVED this dish. I had to use cheddar cheese instead of parmesan, but it came out very well. Next time I'll leave out the onions -- the flavor didn't mellow enough for my taste-- but we'll be making this again. It's a great way to eat your vegetables!

Favorite Peanut Butter Cookies

Very good once you turn down the oven heat to 350 degrees and bake for 8-10 minutes rather than 12-15 minutes. I got some really poor results at first -- the cookies overcooked even they were in the oven for only 8 minutes. They were super crumbly and unappetizing. Turning down the oven heat made a HUGE difference. (I live at sea level.)
