About this Cook
I am not a very good cook. I cook because I have to. My husband is an incredible cook, and very into food.
My favorite things to cook
Ordering pizza
My favorite family cooking traditions
Christmas Eve - Seven fishes (my husband does all the cooking, I watch) Kids are very involved in cooking and love to help.
My cooking triumphs
I can decorate a mean birthday cake. I can not promise it tastes great, but it looks good.
My cooking tragedies
To many to tell. My favorite is the time I tried to make my own lemon chicken and sliced up 3 or 4 lemons. I cooked them up, rinds and all, with about ½ bottle of wine and 4 chicken breasts, and then serve it to the in-laws. It was so bitter and nasty tasting, but no one said anything.

Baked Flounder
All I have to say is both my kids like it. One will eat anything and one will eat nothing but junk if I let her. I have left out items like no green onions since kids will not eat and they still like it. They call it the flounder with the cheesy crusty stuff on top. Hubby thinks it is “OK” but eats every bit. Not 5 stars but I love it for those nights when I don’t want to hear “I don’t like this” but want to be healthy. That in our house mean more then anything.

Southwestern Pasta Salad
This recipe was a life saver! At 8:30 in the morning I remembered I needed to make a pasta salad for an event at 11am. I was able to mix up and have in the fridge to cool in no time. I used uncooked frozen corn and I did put it in the freezer for about 10 minutes to take the heat out of the pasta before putting in the fridge. I did not have plum or canned tomatoes so I added a cup of salsa instead and it was awesome. I also cut back on the oil and was glad I did- any more would have been too much.

Tex-Mex Turkey Soup
This was great! I kept it low fat and left out the cheese and cream and it was great. I also got more servings the out of a batch then suggested. It reminds me of one of the name brand's "southwestern" soup I eat a lot of. I can't wait till the day after thanksgiving!
