J.P.'s Big Daddy Biscuits

Reviewed: Jan. 10, 2012
I made these last night. They were easy and tasted fantastic. This was a first for me so next time I will add cheese and ham...play around with it. I did have to knead mine or the dough wouldn't have been cohesive. I used margarine insteadof shortening. Will make over and over, thanks.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Dec. 13, 2011
First time making butter chicken and it was fantastic. Chicken needs more than 10 minutes to cook. I used fresh garlic and ginger and double the amount. Other than that, this was just delcious! Thank you.

Easy Meatloaf

Reviewed: Dec. 5, 2011
I gave this a 3 based on the written recipe not the taste. The flavour is great, but it wasn't written properly. I am AMAZED no one has said that the cooking time is WAY off. I used 1lb turkey, 1/2lb beef. I did 350 for an hour and let it rest and when I cut into it, it was not done. So I put the temp up to 400 and did another 30 min. STILL was bloody in the middle. Did ANOTHER 30 min at 400 and it was finally done. It isn't my stove because this is the first time I've had a recipe NOT turn out from AR. So this took me double the time...we ate dinner at 8:30pm because of the timing issue....way too late.

Juicy Roasted Chicken

Reviewed: Nov. 29, 2011
This lived up to its name. I used garlic powder, salt, pepper, dried minced onion for seasoning. Added water to the pan along with butter. Served with skin on yukon gold mashed potatoes, roasted asparagus (another AR recipe), and gravy. Didn't season the inside (forgot), but will next time...was still an amazing chicken, thanks!

Oven-Roasted Asparagus

Reviewed: Nov. 28, 2011
Just made these for dinner tonight...only thing I missed was the lemon, but it would have been great I'm sure! I took them out 4 minutes early because everything else was ready (roasted chicken, mashed potatoes) Boyfriend dug in before I got to the table and I heard him say "asparagus is good hun"...he was right mmm! Fantastic, thank you. Will definitely make this for the christmas dinner I'm hosting this year.

Blueberry Cream Muffins

Reviewed: Nov. 27, 2011
I took the advice of another reviewer and added the sour cream into the egg mixture and added 3 pints of blueberries all together. Used 1 cup brown sugar, 1 cup white. These turned out perfect! Second batch of 12 I only baked for 18 minutes (just a preference thing, 20 min was a more golden finish than I wanted). Have made these before as I had them written in my recipe book, but not sure I had reviewed these to die for muffins yet!

Sausage Stuffed Jalapenos

Reviewed: Nov. 25, 2011
These were delicious but were VERY hot even after seeding. I was surprised. I took one bite and for someone who loves hot/spicy food, my mouth was on fire. I almost didn't bring them to the party I was going to but my b/f talked me into it. The entire plate did get eaten....but no rave reviews. I use jalapeno a lot so I was surprised this was too much for me...maybe rinsing them before stuffing would have helped reduce the heat.

Hamburger Soup

Reviewed: Nov. 21, 2011
Delicious and healthy. Can't say enough. I used ground turkey (heated EVOO first, 2T.sp.). There is no need to add the flour at the end...you want it thin since it's a soup! I did find myself adding some salt as it was a bit bland....also added lots of fresh ground pepper and dried parsley. I cooked some eggshell pasta on the side (would have preferred elbow but didn't have it) in chicken stock, drained and allowed my guest (aka boyfriend haha) to add what he wanted to make it more filling. I had 3 pieces of buttered bread with one bowl! lol Yummy Bet it will be even better tomrrow...we're each taking leftovers for lunch...everyone at work will be jealous! Boyfriend said he's excited to eat it again tomorrow:) Dinner and lunch for two people not bad for one pot. Tomorrow is here and I'm updating....the soup is FAR better the next day!

Soft Chocolate Cookies

Reviewed: Nov. 20, 2011
In the middle of making this I realized I only had about 1/4cup of butter. Thankfully, I had a bit of apple butter in the fridge to make up for it! These lived up to their title. Just like a soft chewy brownie inside, even after cooling. This recipe along with another choc. chip oatmeal recipe I found will be given out as xmas gifts this year! Makes exactly 33 as shown. Thank You for the amazing recipe!

Ramen Coleslaw

Reviewed: Nov. 20, 2011
Can't say enough about this slaw. Divine! I used red cabbage and it was fantastic. I couldn't find the specified chicken flavoured ramen so I just bought steam fried chinese noodles (they were in a yellw and red package) and used a pack of chicken OXO for seasoning. Used rice wine instead of white wine vinegar. Used a small fry pan for toasting sesame...heat it first then add the seeds. Make sure you keep an eye and turn after every 10-15 sec or they will burn. I had mine at med heat. I omitted the almonds only because my grocery bill that day was getting too high haha. Served with/on top of a pulled pork sandwich...this will be something I make a lot from now on!

Swedish Meatballs I

Reviewed: Oct. 28, 2011
I found this recipe almost a year ago and have made it regularly since then. My boyfriend asks for this weekly. I use ground turkey since we don't eat much red meat. I use italian bread crumbs instead of the cream of wheat since I rarely have it on hand. I also mix half evaporated milk and half chicken stock as it helps with flavour and I use 2 cans of cream of mushroom soup instead of one mushroom one chicken. I serve mine with rice. Thank you...I can't say enough about how delicious this is.

Rice & Beans (Haitian Style)

Reviewed: Oct. 28, 2011
Love this dish. I used canned kidney beans and added them to the rice at the END. They are already cooked therefore any more cooking would be too much (as seen by other reviewers who used canned beans) which to me is the best/easiest way to make this dish.

Samoan Panikeke

Reviewed: Oct. 25, 2011
I have never made any sort of fried dough and found this recipe to try. It was amazingly easy and beyond delicious! I posted photos to my facebook of them and several ppl asked for the recipe based on looks alone! If they only knew how tasty it is!! You do not need 6 cups of oil. I used a large frying pan and filled it about half way...that was plenty...just flip them over when they appeared to be golden. I sprinkled mine with cinnamon sugar when they came out mmm TIP: don't cover them up until they have completely cooled! Otherwise, they just become soggy.
