Anthony's Lime Chicken with Pasta

I LOVE this. Made a few changes...I didn't bread the chicken, I just left it as it was, since I read that it can get soggy. I also read that the rind can make the dish taste bitter, so I squeezed the limes over the chicken and then added a bit of the fruit (sans rind) to the mixture. My husband and I absolutely loved this recipe, and will be making it again. The leftovers were even great!

Easy Pasta Casserole

My husband and I loved this and ate for the leftovers for the next day's lunch and dinner. I did tweak it a little, since reading that some people thought it a bit bland. I first sauteed onions and bell peppers in olive oil until it started to carmelize before adding the beef to brown. I then seasoned the beef with garlic, salt, pepper, and italian seasoning. I used a spaghetti sauce that had lots of veggies in it, and used diced tomatoes instead of stewed. I also used penne pasta. It was soooo flavorful and was great with crusty bread.

Chicken Bake and Rice

Neither my husband nor I enjoyed this. The sauce was just too rich for us, I think maybe if I used lighter versions of ingredients for the sauce it would be better, as well as use less cream cheese. I just didn't like the flavor that was produced from the cream cheese, mushroom soup and wine mixture.

Baked Chicken and Onions

My husband and I were both very pleased with this recipe. We squeezed lemons for the juice, and omitted the paprika, simply because we didn't have any on hand. We also used thinner chicken breasts, which really soaked up the flavor. I plan to incorporate it with pasta next time.
