Chicken with Mushrooms, Prosciutto, and Cream Sauce

Reviewed: Mar. 31, 2009
My husband loved this, the flavor was really good, I just can't enjoy chicken on the bone (as much as I want to because of the $$$ savings). I used heavy cream instead of sour cream but otherwise followed the recipe. Next time I will try with boneless, skinless chicken breast and cook it for less time. If you like chicken on the bone, highly recommend this recipe.

Banana Oatmeal Crumb Cake

Reviewed: Dec. 30, 2008
Very nice breakfast style cake and a terrific use for ripe bananas. I added the cinnamon to the dry ingredients of the batter and the 1 Tablespoon of flour to the crumb mixture as suggested. It had great flavor and my guests enjoyed it. Thank you!

Pulled this together with stuff on hand and ended up with a delicious dinner. Served it with Wheat Pilaf, Sauteed Carrots and Spinach with Bacon. Big hit!

Stuffed Mushrooms with Spinach

Huge Hit! I brought these to a party (multiplied the recipe by 5) and everyone raved about them. Then I served them as a side dish and it was something different that made a pretty presentation. I can't recommend this recipe more highly.

Asparagus, Chicken, and Pecan Pasta

Reviewed: May 7, 2008
I found this recipe to be bland. I actually put a tablespoon of freshly minced garlic and everyone thought it could still use alot more. I also thought some red pepper flakes could have helped. I gradually added the parmesan cheese and it didn't blend in very nicely. I thought the pecans were a nice touch, but they kind of freaked my sister out when she thought it could possibly be a hard piece of chicken. I think the next time I would make it without the chicken, maybe just toss the parmesan on at the end rather than trying to blend it in and definitely add more spices.

Chicken Sherry

Reviewed: Jan. 15, 2008
I made this with stuff I had in the house and my husband loved it. Instead of the beans, I minced and blanched some carrots and mixed them with some frozen baby peas. Instead of Sherry, I used Chardonnay. Instead of 2 cans of cream of chicken soup, I used 1 can of cream of chicken and 1 can of cream of mushroom. Sooooo yummy. Tasted like a chicken pot pie and the parmesan cheese made a low carb friendly crust. Delicious.

Oven-Baked Caramel French Toast

Reviewed: Dec. 29, 2007
Sooooooo delicious!!! It tastes more like a sticky bun than french toast. Don't skip the caramel sauce when you serve it, it really adds the finishing touch. We went through all of the caramel sauce and only half of the pan of french toast, so I would suggest doubling the sauce if you think the entire pan of toast will be eaten. This is very sweet, so keep that in mind if you aren't a fan of sweets for breakfast. My whole family loved it when I served it for Christmas Brunch.

Bagel and Cheese Bake

Reviewed: Dec. 29, 2007
I thought this was very good. Using the bagels gave it a really nice texture and the onions gave it great flavor. Very quick and easy, I made it after everyone left on Christmas Eve so that I could bake it for Christmas Brunch. It was a huge hit. Great recipe.

Carrot Rice

Reviewed: Dec. 18, 2007
Absolutely DELICICOUS. Followed the recipe exactly (except I didn't put the cilantro on when I served it). I plated it with Beef Tenderloin with Ginger-Shiitake Brown Butter (recipe on this site) and I sauteed some peapods with toasted sesame seeds and seasoned them with salt and pepper. Gorgeous presentation and I truly can't tell you how yummy it was. I did have to add salt when I was eating the rice, so I think the next time I will put some salt in the rice and boiling water (that's just a personal perference).

Absolutely DELICICOUS. Followed the recipe exactly (except I put the filets in an ovenproof dish rather than putting the skillet in the oven). I served it with Carrot Rice (recipe on this site) and I sauteed some peapods with toasted sesame seeds and seasoned them with salt and pepper. Gorgeous presentation and I truly can't tell you how yummy it was. The butter sauce is out of this world. Easy meal that would be perfect for a dinner party.

Delicious Easy Chicken Francese

Reviewed: Aug. 7, 2007
This was excellent. My husband wanted me to give it 19 stars out of 5, he loved it so much. I did use about 4 tsps of corn starch mixed with 4-5 tsps of cold water to thicken the sauce as suggested in another review, which was perfect. I also put salt and pepper in with the dredging flour. Other than that I followed the recipe. I love that I could saute the chicken and make the sauce and then when my husband was on his way home, I put the sauce over the chicken and put it in the oven to heat it though so it was freshly cooked and ready at the perfect time. I served it over angel hair pasta with fresh steamed broccoli (the sauce was excellent over the broccoli, too, and there was plenty of it). Was as delicious and pretty as anything you'd find in a fancy restaurant. I highly recommend this recipe.

Heavenly Chocolate Mousse

Reviewed: May 4, 2007
I thought the recipe was excellent and it was a huge hit at my dinner party. I did add vanilla into the whipped cream as the other reviewer suggested and I found it took me longer to get the yolk mixture to temperature, so leave yourself a bit more time when creating this dessert. In a stemmed glass topped with fresh whipped cream and a fanned strawberry it was very elegant and delicious.

Sinfully Rich P 'n' B Pie

VERY Peanut Buttery, everyone better absolutely love peanut butter for this to go over at your next party. I used 10 chopped Reeses Peanut Butter Cups instead of the peanut butter chips and I salted the filling to taste (because I thought it tasted a little flat). The next time I think I will whip 8 oz of heavy cream instead of using the cool whip. The real test is when I serve it tonight to my niece and nephew who are peanut butter addicts!!!!

Oh my gosh!!! So good!!! My husband and I are on a low carb diet right now and even though this is higher fat than we should generally have, as a treat this is FABULOUS!!! The sauce is so YUMMY!!! I served it with Mashed Cauliflower and Steamed Broccoli. My husband said, "definitely a keeper."

The flavor of this stew is excellent! Very well received!!! I did thicken it up quite a bit more than the recipe called for but I guess that's just a personal preference. EXCELLENT!!!

Asparagus and Shiitake Risotto

Reviewed: Oct. 16, 2006
Made this recipe last night, just the way it is written and it was AMAZING! This was the first time I made risotto, so I made sure I had all the ingredients ready to go before I started and it was a huge success. Can't wait to make it again and neither can my husband, he LOVED it. It was great leftover for lunch as well!!!
