Beer Margaritas

I couldn't believe how good these were, and easy enough to remember the recipe once you've had a few (pitchers). ;-) I used plain ol' Miller Lite and they were great - I'd bet the quality of the tequila has a lot more to do with the outcome than the quality of the beer so spend wisely! :)

White Peach Sangria

so delicious... normally I like to make the recipe as stated rather than change it the first time but I've never heard of peach vodka and I think peach schnapps is GROSS so I used a mixture of blueberry Smirnoff and Stoli Razberi since that's what I had on hand. OMG was it good! hit of my housewarming party. used sliced white peaches and gala apples plus a pint of blueberries. everyone asked for the recipe!

Corned Beef Hash Cakes

I had the total opposite problem of most reviewers - my mixture was FAR too wet to make patties out of! I did add the egg AND use instant mashed potatoes and that must be the difference... I wonder how dry other people's potatoes must be that the cakes a) can be formed at all and b) crumble upon cooking. I added some frozen shredded hash browns to give mine some more bulk, then just glopped it on the griddle like really thick pancake batter. The egg helped them crisp up on the outside so they still flipped nicely... went over well at my office's weekly team breakfast!

Corn and Black Bean Salad

yum! the dressing has a great mild, sweet flavor... next time I might add some red pepper flakes to kick it up a little though. I added fresh chopped tomatoes, avocado, black olives and a squeeze of lime juice which I think bring this up to 5 stars.

Cashew Crusted Chicken

hmm... tasted good, even after I modified based on what I had on hand (orange marmalade, yellow mustard with a little horseradish) but the cashews didn't stick at all. good enough to try again though, so next time I'll try grinding the nuts in a coffee grinder rather than chopping them. I also thought it needed salt, even with salted nuts. it went really well with Sugared Asparagus (from this site).

Crisp Lemon Sugar Cookies

Delicious! I used all butter since I didn't have shortening. 7 minutes was all they needed in the oven to be perfectly crispy on the outside and chewy on the inside. These will make a regular Christmas appearance from now on!

Cranberry-Pumpkin Cookies

so good! I forgot the orange zest but they're still completely yummy - I'm eating them right off the cookie sheet right now! keep in mind though that (unless I did something wrong) these don't spread out at all so it's best to roll them out smooth and squish a little rather than just dropping them off the spoon. they're just prettier that way!

Slow Cooker Chicken Stroganoff

This was awesome! Even making my own spice mix (Italian Dressing Mix recipe from this site) this was crazy easy. I was nervous about cooking the meat without liquid but it came out beautifully. I swapped turkey breast cutlets for the chicken, just to use them up. Next time I won't bother cutting them though - they fell apart when I stirred in the soup! It did need a splash of milk to thin it a little to combine with the No Yolks dumplings and frozen peas I added at the end. I'm looking forward to leftovers for lunch. :)

Golden Rum Cake

I haven't taken this cake out of the oven yet but I had to come write a review anyway. I have been standing in the kitchen just inhaling for the last 45 minutes because I can't get over how amazing this smells! I used caramel cake mix and butterscotch pudding with Bacardi Select dark rum. My dad will be lucky if this lasts til his birthday tomorrow! Either way, I'll update this post to say how great it tastes. :)

Chocolate Ganache

I used sweet vermouth instead of rum in this recipe (just because I had it and it sounded good) and it was delicious. I was worried at first that it looked too thin and would run right off the cheesecake I was coating but it turned out perfect, glossy and thick. It did make about half again as much as I needed though (for my 10 inch cheesecake); I had to restrain myself from eating the leftovers with a spoon!

White Chocolate Cheesecake with White Chocolate Brandy Sauce

Even with some healthful substitutions, this cheesecake was absolutely amazing. I replaced 2 of the cream cheeses with neufchatel, 2 of the whole eggs with 2 egg whites each and 1/2 cup of the sugar with Splenda. Nobody guessed! It was as rich and silky as you'd expect from a bakery. I didn't make the sauce though; instead I covered the cake with chocolate ganache (10 ounces of dark chocolate, 1 cup whipping cream and a splash of sweet vermouth). Oh and I added a chocolate graham cracker crust. This is a definite keeper!

Slow Cooker Chicken Taco Soup

Yum! This is awesome, especially considering how easy and inexpensive it is! I used the canned tomatoes with jalapenos instead of the ones with chilis and added some cumin and red chili flakes for a little extra punch. I'm going back for a second bowl right now.

Sugared Asparagus

Oh. My. Gosh! This is my new favorite side dish. As another reviewer suggested, I sauteed some fresh chopped garlic in the butter and brown sugar before adding the asparagus (and sliced portabellas, yummy!). Just needed a touch of salt when it was done, and the flavors all complemented each other PERFECTLY. The sauce cooked into a beautiful glaze to top my breaded chicken. I'm making this again tomorrow night!

Lower Fat Banana Bread I

I make this bread ALL THE TIME - it's become famous around my office. I use whole wheat flour and Splenda, and occasionally some flax seed meal, so I don't feel so guilty about adding chocolate chips too. :) Even the "healthy food is for sissies" men I work with devour this and beg for more! It's also really great with dried cranberries mixed in (making 'cranana bread', as it's affectionately known around here).

Sugar-Free Frosting

This frosting was really yummy, but needed a few tweaks. I tried making it according to the recipe but it came out WAY too wet for my cupcakes - it would never stand up to a layer cake. I ended up doubling the pudding as suggested but it was still a little thinner than I would have liked. Next time I'll halve the whipped cream and it should be perfect.

Chocolate-Zucchini Cupcakes

These were terrific! I always substitute applesauce for oil, whole wheat for white flour, and Splenda for sugar when I bake (I used a combination of the Brown Sugar Blend and regular Splenda since I didn't have enough brown), and I also took the suggestion of doubling the chocolate. They were moist and flavorful without being overly rich or sweet at all, and with the Sugar-Free Frosting recipe from this site (Lite Cool Whip, neufchatel cheese and sugar-free choc. pudding mix) came out to about 170ish calories apiece! I'll be making them again for a charity bake sale - dieters need goodies, too! Might even try crushed pineapple instead of applesauce and omit the chocolate... :-p

Seared Tuna with Wasabi-Butter Sauce

This was really yummy, and I am not a fish fan at all (except for sushi). The only reason I didn't give is 5 stars was I did halve the butter as suggested, add garlic to the sauce, and I only cooked the tuna about 2 minutes per side.
