I am married and a mother to 2 small children. I have been teaching English for about i9 years and loving it more everyday.
My favorite things to cook
I am Hispanic so I love cooking Mexican food. The hubby blames the 50 pounds he has gained since we got married on my cooking. I am always ready & willing to try new recipes until I find the right one.
My favorite family cooking traditions
Traditional Mexican dishes on holidays always brings back wonderful memories. We eat Posole or tamales which are all made in our grandfather's kitchen. We all anxiously wait for that first batch or bowl to be ready and then fight to be the first to eat it. For some reason the house keeps getting smaller each year!
My cooking triumphs
I know I made it when I can make a recipe to taste just like moms! I also love it when I try a new recipe and everyone say they love it! That makes me feel like I succeeded!
My cooking tragedies
Everytime something comes out plain or it just pushes me to find a new recipe and try again.

Sugar Cookies
Great on taste. Was looking for a cookie to make shapes for Halloween and this cookie wasn't it. It was too soft, even after leaving it in the fridge for a while. A+ for taste C- to use for cookie cutters.

Enchilada Sauce
Boiling the Chile peppers as oppose to just letting them soak is what I usually do. After boiling, I just pop the whole thing (minus seeds & stem) in blender. I strain in a colinder afterwards. It is time consuming but it does keep it thick. I add garlic powder, onion and salt. While boiling the smell ifmakes you cough, you got yourself some HOT sauce!
