Strawberry Vanilla Pancakes
I made these for my mom and myself this morning. I used 1 tsp salt, walnut oil, I was out of baking powder so I used 1 tsp baking soda and 1 tsp lemon juice, about 3/4 cup milk, tsp each of vanilla and almond extract. As we were eating, we wondered what they'd be like if we added white chocolate chips to the batter....Certainly not breakfast fare, but sounds yummy.

Indian Chicken Curry II
As a reviewer suggested, I toasted the spices, then added olive oil and onion. I also used the whole can of coconut milk, and added about 1/2 cup more yogurt. Sweetened with honey, and used a leftover diced baked sweet potato as well. Served over quinoa. Wonderful!

Salmon With Scalloped Sweet Potatoes
I didn't make the salmon, I just wanted a sweet potato side dish that wasn't packed with brown sugar and suffocated with marshmallows. They're good as is, but need tweeking. I used about 2 tablespoons oj concentrate, real maple syrup, 3 cloves of garlic, dried ginger, butter, thyme, salt, and black pepper. I may try the salmon later, but will definitely be making these potatoes often. Thank You!
