Scottish Shortbread IV

I made this recipe exactly as written and it was really delicious. I really recommend it. I have never made a shortbread recipe without salt before, but I used 1/2 salted butter and it was great.

Peanut Butter Frosting

I only used 2 cups of sugar, but otherwise followed the recipe. This turned out really delicious and peanut buttery. We made chocolate cupcakes with this frosting on top and they tasted like peanut butter cups. Nummy.

Fresh Pear Crisp

We had a bag of pears dropped off at our house that needed to be used ASAP so I found this recipe. This was very good. I made a few changes based on my personal preferences. First I didn't peel the pears. I kept the skin on. I just like it better that way. I substituted butter for margarine (cause I don't like margarine and I LOVE butter) and allspice for cinnamon (because I am allergic to cinnamon). I also threw in some raisins because I just felt like it. It came out really nice.

Pasta with Blue Cheese and Walnuts

Pretty good, but I did make a few changes. I added salt and I mixed a little of the blue cheese and the walnut mixture in with the pasta so it melted a little and coated the pasta a bit. Then I served and sprinkled some blue cheese on top.

Addictive Sweet Potato Burritos

I used black beans and whole wheat tortillas. They were totally addictive, and froze and reheated just like a regular frozen burrito. Yummy yummy. I will definitely be making these again.

Chocolate Mousse II

This was so easy, that I was almost nervous about it, but it turned out great. I used a double boiler for the chocolate and then whisked in the boiling water. It came out incredibly rich and delicious.

Old-Time Popcorn Balls

This recipe was easy and fun. My 13 year-old nephew helped to make them and he had a great time helping make them and then a great time eating them. I was a little nervous about the molasses, but it was a huge hit. I think next time I will try putting peanuts in it and see how that works.

Pizza Dough I

Exactly what it claims to be. I literally realized last minute that the pizza dough I had was bad. The hubby really wanted pizza, so I looked this up and made it. It wasn't the best pizza dough ever, but it was extremely good considering the thyme (ha...pun...although I really did but some thyme in it) and effort involved. It was very simple and functional.

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

I couldn't find sun-dried tomatoes a the grocery across the street so I just used sun-dried tomato pesto. It worked really well. The flavors really worked and it was really easy. I didn't measure out the goat cheese or the pesto. I just used what I wanted. I also added a little spinach because I like the texture.

Quick Yeast Rolls

Very nice. The recipe easily made 12 rolls, as others have noted. They were super easy too. I think next time I will try adding a little bit of honey. The flavor wasn't quite what I was hoping for.
