Tomato Chicken Parmesan

What's not to love? Breaded and fried chicken, pasta sauce and cheese! This is really good and really easy. We serve it over spaghetti with a side of bread and salad!

Broiled Tilapia Parmesan

I had some tilapia in the freezer and I wanted to try a new recipe. This was good and I will definitely make again. Next time I will be sure to measure the ingredients because I think I used to much mayonnaise this time so it was a little tangy. No fault of the recipe....just the lazy cook who didn't feel like measuring.

Ronaldo's Beef Carnitas

Really good recipe. I made this for a friend who just had a baby. I didn't exactly measure everything so next time I will...mine was not as flavorful as I thought it would be but I'm pretty sure I skimped on the chili powder and the cumin. After I shredded the meat, I put it back in the oven in the juice to stay warm while I made the rice and beans. Really good!

Really good, really easy. We don't eat skin in our house so next time I will lift the skin up and put the rub under the skin to get more flavor on the meat.

Shepherd's Pie VI

This was really good! I didn't have time to cook the carrots separately and mash them too so I just added frozen peas and carrots to the beef mixture. I did as other reviewers suggested and used the beef gravy mix. My husband and 11 month old son LOVED this!

Spinach and Potato Frittata

This was really good. Instead of red potatoes I used frozen hashbrowns because it's what I had. I used more spinach because I didn't want leftover raw spinach in the fridge. I used egg beaters to cut some calories as well as 2% cheese (but a little more of it). =)

Zucchini and Potato Bake

What a great flavor! I should have cut the zucchini larger because mine got pretty soggy before the potatoes were tender. Live and learn...we will definitely make this again. My 11 month old son LOVED this!

I didn't care for this AT ALL. I added extra cheese and seasoning and still thought it was extrememly bland. Also, I didn't like the texture. I will not make this again.

Too Much Chocolate Cake

This cake is so moist and delicious! I made it for a co-wordkers 50th birthday party and received rave reviews! To make it even more "chocolatey" I added chocolate buttercream frosting on top.

Best Marinara Sauce Yet

This was really easy and really good. I sauted the onion and garlic in a little olive oil then put in the blender with the stewed tomatoes and tomato sauce. I also added a pinch of basil and parsley. The consistency of the sauce was perfect!

Enchiladas

These were super yummy! As other reviewers suggested I added a little enchilada sauce and taco seasoning to the ground beef. I'm not sure how two pounds of meat only makes 12 enchiladas...I made 20! Next time I will either use one pound of meat and the same amount of sauce or two pounds of meat with double the sauce. Mine turned out a little dry because I didn't have enough sauce.

Baked Pork Chops I

These were SO good! My mother-in-law was visiting and I made these for dinner. She kept saying what good flavor they had. I used panko crumbs instead of bread crumbs...it's what I had in the pantry. My husband and his mother are not fans of gravy so I didn't cook them in the gravy...I just had it on the side. We will definitely make these again!

Quick Chicken Divan

Allrecipes picked dinner for me tonight based on an ingredient search so this is what we had. I used 2 cans of cream of chicken, 1 lb chicken and probably only a cup of cheese. I seasoned it with salt, pepper, garlic powder, onion powder and a little curry powder. We served it over brown rice. My 10 month old son LOVED it...he finished an entire bowl! My husband and I thought it was OK. We give it 4 stars because it was easy to make and it can be made completely with things we always have in the fridge or pantry.

Creamy Au Gratin Potatoes

These were pretty good but not as good as I was hoping for. I would call them a little bland. I left out the onion because I'm not a huge fan. I may make them again but I'll try to think of a way to spice them up a little. We had them for Easter dinner with Ham, Green Beans, Crescent Rolls and Strawberry Trifle.

Beef Tips and Noodles

We made this tonight with venison. It was a tough old deer so we cooked it low and slow to help tenderize it. We cooked it for 2 hours at 300 degrees. Also, I used 1/2 cup of red wine instead of water and we served ours over rice. Yummy!
