Im Just Me
About this Cook
Im 35 yrs old. Single mom of 9.5 yr old daughter who also loves to help me cook. Ive lived in Lubbock, Texas for just over a year now and love to create dishes, dips and other appetizers.
My favorite things to cook
Just about any casserole, soups, cakes and lots of stuff
My favorite family cooking traditions
We just started a new tradition where I make all the cakes for the bdays in the family and eventually, it will be handed down to my daughter. I have also taken over the cooking for Thanksgiving and have been doing it for two years now. And now Im getting to host Thanksgiving at my new house with my family and my fiances family! :)
My cooking triumphs
Always have successful parties! Im THE Party Girl!
My cooking tragedies
Tragedy turned triumphant! Made my first angel food cake...it fell, but to my advantage. I just cubed it up and layered it for a strawberry shortcake trifle.

Layered Salad
I love layered salads! I dont use the egg because it tends to get a little ripe smelling. I use a dry ranch packet in the mayo and I dont use peas. I use black olives and cherry tomatoes, cucumbers and red onion. But everyone has their own variations...they are all great!

Yellow Squash Casserole
Great recipe!! I use saltines instead of the buttery crackers.

Potato Casserole
Excellent recipe! I usually put a little garlic salt in the butter before melting it to mix with the cornflakes. Not much, just enough to give a hint of garlic. Nothing over powering. I also use Cream of Chicken with mine.
