I survived twin pregnancy!
the Chocolate Shoppe
About this Cook
I have 5 kids aged 8, 9, 12 and 4 month old twins. Therefore, easy and fast, but still healthy and kid friendly is what I like in a recipe. Have been mainly vegetarian for roughly 15 years but I still eat dairy, some fish and eggs so it's not hard to get lots of protein. I like to vary my diet and try new things.
My favorite things to cook
I like baking and am good with pie crust and quick breads. I never did get the hang of homemade bread, but now there's machines for that. I like using tofu because it's cheap and fast, also fresh pasta, fresh herbs, pesto, Italian, Indian foods, and Mediterranean eg hummus. I love the Moosewood cookbook and my slow cooker.
My favorite family cooking traditions
We always do turkey at Christmas and usually at Thanksgiving. I make lots of sweets around Christmas time and have favorites such as bourban pecan cake and Christmas shortbreads that I like to make annually.
My cooking triumphs
Lemon blueberry pound cake. Tandoori tofu, curry with potato and cauliflower. Tarragon mushroom steak for hubby after watching M. Smith make it on TV. Yesterday's buttermilk pancakes - I had to make a second batch and they all disappeared, too. Pesto, hummus and baba ganouj. Letting the world know you can microwave corn with the husk on, you don't have to boil all the flavour out of it.
My cooking tragedies
a low fat chocolate cake. It tasted low fat, and was kinda rubbery. Ah well, live and learn. Cakes need a little fat, not just buttermilk and egg whites, if my kids are going to eat them.

Rhubarb Muffins
I got 21 muffins out of a double recipe. I used a generous measure of brown sugar for the topping and had lots. I used 1/2 the nutmeg as recommended and added a bit of fresh orange peel because I used plain yogurt. I also used 1 cup of apple and 2 of rhubarb.

Naan
Having last made bread in grade school that would be better used as a door stop, I was amazed that this bread turned out okay. I made it too thin at first but by the last few pieces I had it sorted out and it was great. The pieces aren't golf ball sized, more like baseball sized before you roll them out. I didn't make substitutions, did the proofing with the 1 T of sugar, but used 1 T of yeast instead of a 1 pkg.

Curry-Coconut Shrimp
I love the recipe reviews and always use the advice given: I used 1 cup of coconut milk but skipped adding the sugar, and used 1 tsp each of the spices. This was fabulous with the Reisling wine as recommended.
