I wasn't sure whether to use cold butter and cut it in or softened butter. I went with the cold and the dough was very crumbly. I had to add a few tablespoons of heavy cream to get it to come together. I also added vanilla extract, sprinkled the tops with sugar before baking, and baked them longer (I made them big). Turned out fantastic with these changes.
