About this Cook
I am a wife and mother of two kids, so needless to say...I am pretty busy! It is important to our family to eat together every night and so I am always on the lookout for a quick, yummy dish. I have learned to enjoy cooking but if you want the truth, I would rather bake (not good for the waistline!!).
My favorite things to cook
I really love mexican food, but since discovering Allrecipes, my appetites have broadened quite a bit. One of my very favorite dishes would probably be the baked chimichanga or green sauce enchiladas, both on this site.
My favorite family cooking traditions
My mom home cooked every night, but wasn't really one that loved to cook, so I can't say that we have any family traditions. I am trying to instill in my daughters an appreciation of cooking even if they don't end up loving it! They both like to help in the kitchen and seem to lean toward baking (like me!!). My youngest loves to make bread with me, give her a lump of dough and she will pound the you know what out of it!
My cooking triumphs
A few years ago, we bought a new house and moved in 2 days before Easter. On Easter Sunday, I served an entire sit down meal for 10 in our new home. Even now, I don't know how I pulled it off and it even tasted good!
My cooking tragedies
Early in my marriage (10 years ago), my cooking was AWFUL! My poor husband must have the kindest heart ever. I learned though and can say that the most recent tragedy was that I miscalculated the timing of a lasanga and didn't served it until about 12 am...ouch!

Spicy Fisherman's Pie
This was very good! I only made a couple of adjustments. Taking a tip from another reviewer, I added broccoli. I used White Ruffy fish (very mild) and instead of adding milk to the potatoes, I added about 1/4 cup of the heavy cream. I have to agree with others that it did not have much flavor. I ended up adding some kosher salt and seasoning salt. Would defintely make it again!

Delicious Apple Sauce
This was amazing! I served a bowl, warm from the stove to my daughter and she said it was the best she ever tasted! Super easy and delicious!!
