Spinach and Tortellini Salad
I offered to make a pasta salad for a soccer party I was going to attend. The next day I found myself out of time and ingredients. This recipe was perfect, because all of these ingredients were in my freezer or pantry. I didn't measure a thing, and used whole chopped tomatoes as opposed to cherry. I also used less frozen spinach and WAY less dressing. My team ate it all up and raved- even the spinach haters loved it! The mild, unoffensive flavor was perfect for teenagers. Thanks!

Caribbean Jerk Pork Chops
While not "jerk", this pork was lovely! I marinaded it for almost 24 hours. This left it extremely the moist (one of the most flavorful chops I've had). The cinnamon was the most prevalent flavor, which left it with warm undertones. If you like it spicy, add more cayenne. We served this with the Caribbean Sweet Potato Salad from this site, and the combo was perfect. THANK YOU so much for this dinner.

Caribbean Sweet Potato Salad
OOOOH, YUMMY! This was delicious! We used twice the amount of potatoes, and used half of the oil called for. The amount of dressing was perfectly preportioned to the salad. The combination of sweet, tangy, and nutty was fabulous. We'll make this again (and it's pretty too!)
