Homemade Vanilla Pudding
Yummy! For those of you having difficulty with lumps, you need to pre-mix your cornstarch ( I believe it's called making a slurry). Take equal parts of cornstarch and milk and make a paste. It's kind of a wierd consistancy but anyway, once you have that smooth, pour it into the rest of the milk. I doubled the vanilla and will probably try halving the sugar next time. It's good the way it is but if you can cut some sugar out without loosing flavor, why not.

Hasty Chocolate Pudding
I gave it 5 stars because I'm sure if you followed the recipe exactly it would be fantastic. So good with so few ingredients! That said, I made some changes. Hubby is not a big cocoa fan so I reduced the cocoa to 1/4 cup and added a 1/4 cup of Ghiradelli milk chocolate chips, reduced the cornstarch to 2 tbsp, and, as others did, added a couple of pinches of salt and a tbsp. of butter at the end. I cooked it on the stove because that seemed more "homemade". I was still amazed at how quick it cooked up. I always imagine pudding being a "stand over the stove forever" event but it was really fast and oh so yummy! Packages never again. Can't wait to try vanilla or maybe banana.

Margarita Grilled Shrimp
Have avoided shrimp for years since husband is allergic. Now have two boys that love it so have started trying recipes. This was my first attempt, yummy! Cut back on the red pepper due to the boys. One thought it was still too hot but the other gobbled it up. I think the recipe is perfect as is. I used them for shrimp tacos but will serve over rice so I can enjoy the flavor. I also use the margarita chicken recipe on this site for chicken tacos which is good but this has a more subtle flavor. A keeper in my book.
