I loved this bread. It was the first banana bread that I've made that actually fluffed up like bread should and it wasn't dripping with moisture. Delicious!
Substitutions:
1/4c margarine, 1/4c applesauce
1 egg, 2 egg whites
1/4c brown sugar, 2T Splenda
2 tsp baking soda
1.5c AP flour, 1/2c wheat flour
When I took it out of the oven I was sure I burnt it because it was so brown. So I had to taste it immediately...And I was not dissapointed!
