About this Cook
I'm a busy single Mom of three working full time. I love to cook, but rely heavily on quick recipes.
My favorite things to cook
I love Asian food (especially Thai and Indian) and nothing makes dinner time easier than a quick stirfry and some rice or noodles.
My favorite family cooking traditions
Sunday roast...chicken or beef with all the trimmings.
My cooking triumphs
I'm self taught.....my parents weren't really into cooking. After having my children the library became my best friend. I still go there to pour over cookbooks.
My cooking tragedies
I love to use my crock pot and tried out a rice recipe once. Tasted and looked more like wallpaper paste.

Shepherd's Pie V
This was great, lovely recipe! My kids loved it too! I actually assembled it the night before and put it in the fridge. When I came home from work I just popped it in the oven to bake. I do substitute the rosemary for parsley. I also omitted the salt and added a table spoon of worcestershire sauce and 2 table spoons of ketchup instead. I also upped the back pepper because my family really likes it. The mashed potatoes do need some salt and pepper but a little bit of finely minced green onion helps as well.

Spicy Vegan Potato Curry
loved this recipe!! i'm not a fan of cayenne, so i added two whole green chiles, seeds and all. i also upped the amount of chickpeas, omitted the potato altogether and added some baby spinach at the end and stirred until it was wilted. noticed there were some comments about an overabundace of sauce.....i served this with rice AND naan to sop up all the delcious curry sauce.

Indian Style Sheekh Kabab
My kids loved this as did I! I did make a few changes....I used a mixture of lamb and beef and omitted the cilantro for parsley (as one of my kids hates cilantro). Deelish!!
