Amish Breakfast Casserole
Really good! Will definately make again. I cut down on the bacon and added cubed ham - also used 2% cheddar - I mixed everything the night before, refridgerated it, and cooked it the next morning. It did need a longer cooking time, probably closer to 55 minutes.

Aunt Mary's Banana-Chocolate Chip Bread
Delicious! To make it lower fat, I used 1/4 c. Smart Balance with 1/4 c. applesauce instead of 1/2 c. shortening. I also added 1/2 t. cinnamon and it came out perfect!

Bacon and Tomato Cups
Great! I made it for a Thanksgiving luncheon and they were eaten right away. Changes I made: used turkey bacon, sharp cheddar instead of Swiss, 45 mini phyllo cups (found in the freezer section) instead of biscuit dough, and used just enough low-fat mayonnaise to mix everything together.
