Moroccan-Style Stuffed Acorn Squash

This was really good! I made some changes, which is why I rated it 4 stars instead of 5. Here's what I did differently: I sauteed the onion and celery in olive oil until they were almost soft, then I added a couple of cloves of garlic, 2 green onions chopped up, and about a cup of shredded carrot because I had that in the fridge. I let that cook for a couple of minutes, then added the cup of garbanzos and about 2 T. of raisins and probably a cup of cubed rotisserie chicken meat. Stirred it around, then added the cumin and a dash of cinnamon, but I'm not sure the cinnamon added anything. Also, I seasoned w/salt & pepper at each stage. I added veggie broth and let it come to a boil, then threw in the couscous. I filled the cooked squash with that mixture and topped it with some parsley to make it look a bit nicer. YUM!! You have to try this.

This was really good. Even the onions at the bottom of the slow cooker were yummy! I think next time, I'll add a bit more seasoning on the roast.. some salt and pepper, maybe up the garlic a bit. Thanks! :)

Amber's Sesame Chicken

This was pretty good. I added broccoli to the veggies. Also, I baked the chicken to cut down some of the fat. The sauce was really boring to me.. I added some soy sauce and Asian chili sauce to it to liven it up a bit.. honestly, for me it wasn't worth the calories.

Feta Cheese and Bacon Stuffed Breasts

Wonderful. Only thing I did differently was cut the olive oil in half to reduce some calories & fat, and upped the lemon juice just a tad. It might be good if you tried marinading the chicken in the olive oil and stuff for a few hours first. Soooo good. This is going to be a regular in our house for sure. Thanks!! :)

Broiled Tilapia Parmesan

Soo good! I added probably 1/4 c. of whole wheat breadcrumbs to the topping, and used olive oil instead of butter. Next time I won't cook the fish on the 1st side before putting the topping on. Tilapia is usually so thin that it really doesn't need the extra cooking time. Thanks so much!!

Rempel Family Meatloaf

This was pretty good. Everyone in my house liked it. I took other reviewers' advice and cut down a bit on the onion soup mix. Also, I used Worchestershire sauce instead of steak sauce, since that's what I had on hand. I mixed ketchup & dijon mustard to make a glaze for the top. Yum!

Chicken Tikka Masala

This was my first attempt at anything like this. It came out SO wonderful. I used 1 tsp of salt in the marinade and 3/4 tsp in the sauce. I left the chicken in the marinade for about 24 hours and it came out moist and really flavorful. Thanks for a great recipe!!

Garlic Chicken

This was pretty good. I definitely didn't need the recommended cooking time.. more like 20 minutes but my chicken breasts were pretty small. They came out a little bland.. I think next time I'll add salt to the breasts before the olive oil and maybe put some salt & pepper in the parmesan/garlic mixture. Thanks for a great base recipe!

Szechwan Shrimp

I was really surprised by this recipe. I used 1 lb of raw shrimp, added some broccoli, and tripled the sauce. Next time, I think I'd just double the sauce as it was a bit too "saucy" for me. :) This was sooooo yummy!! Thanks! We'll be making this often!

Easy Vodka Sauce

This is great! I gave it 4 stars because I made some changes, without which I think this sauce might've been a little boring. I added 3 or 4 cloves of chopped garlic with the onion, and I also added about 2 tsp. of Penzey's Pizza Seasoning, which gave it great flavor. I was able to freeze almost 1/2 of this, and I can't wait to eat it again! This one's a keeper!!

Spanakopita (Greek Spinach Pie)

YUM! I only gave this 4 stars because I made some changes: I used an 8x8 pan because that's all I had; I added 1.5-2 Tbs chopped fresh dill to the cheese/egg/spinach mix; I doubled the green onions/onion/garlic; I used 2 10 oz boxes of chopped frozen spinach (defrosted & well drained); I used about 1.5 cups of feta cheese. It was wonderful! I'll definitely be making this again. Thanks for a great base recipe!
