Chili Dog Casserole II

As hard as it is for me to say, the 2 guys I cook for thought this was pretty much the best thing I ever made (big surprise)! Even my 1 year old daughter ate this. Total crowd pleaser. I'll probably be making this at least 2x a month. Super cheap too! Used 97% fat free kosher dogs, whole wheat tortillas (rolled up with a little mustard, cheese, diced onions), 1 can turkey chili, and 1 can lean beef chili with beans. YUM!

Slow Cooker Dump and Go Cheesy Chicken

Good jumping off point. ALWAYS use frozen chicken breasts in the slow cooker. They come out so much more moist and tender. I used 1 can of cream of chicken and 1 can of cheddar cheese soup. Added a splash of white wine. Served over brown rice. The 2 men and 1 year old in my house ate it up!!

Mom's Zucchini Bread

YUMMY!! I made a few changes to lighten this up since everyone I know is on a diet these days: I used all whole wheat flour; instead of 3 eggs, I used 1 egg white and 1/2 c. egg substitute; instead of 1 c. oil, I used 1/2 c. nonfat plain yogurt and 1/2 c. peanut oil. None of us missed any of the calories or fat.. this is delicious!

Restaurant-Style Coleslaw I

Really good. To lighten it up, I used mostly nonfat yogurt instead of the mayo, then added the vinegar to taste since yogurt's pretty tangy. I swear, you won't miss the mayo!

Sarge's EZ Pulled Pork BBQ

So good. No need to brown the pork prior to slow-cooking it. I cooked the pork on low for about 8 hours, shredded it and put it back in the pot with BBQ sauce for a couple hours. Melts in your mouth!

Light Wheat Rolls

PERFECT!! We loved these. Didn't change a thing except the ratios of flour.. I used more whole wheat and less AP. Made the dough in the bread machine and it turned out beautifully. I made cloverleaf rolls. Yum!

Curried Coconut Chicken

Really yummy! I had to add quite a bit of salt though. Maybe we just like stuff salty.. not sure. Also, I added the juice and zest of a lime, which seemed to brighten it. However, I really think this dish would benefit from the addition of cilantro at the very end. I'll try that next time. Thanks!

Chicken Marsala

This was delicious. I didn't change anything besides adding 1/4-1/2 c chicken stock just to stretch the sauce to serve over pasta. I used crimini mushrooms. SOOOOO simple and good.. just the kind of food I like! I'll be making this a lot! Thanks :)

This was pretty good. I added a jalapeno to the onion/bell pepper, and used chicken stock rather than water. This still was a little bland to us, maybe I'll add some hot sauce with the chicken stock next time. Thanks.

Lime Chicken Soft Tacos

Gave this a 4 because I changed some stuff.. I took the advice of a few others and doubled the sauce, added it to the slow cooker and threw the chicken in on low for about 8 hrs. I also added about 1/2 cup hot sauce. I took the chicken out, shredded it, and added it back to the liquid for another hour or so. It makes for a pretty juicy soft taco, but that's how we like it. Thanks!!

Baked Whole Cauliflower

Took the advice of others and cut the cauliflower up before cooking to counteract blandness.. next time I think I'll leave it whole and steam it w/chicken stock.. maybe that will add more flavor.

Lemon Garlic Tilapia

Gave it 4 stars because I made a couple changes. I sauteed the garlic with the butter until the butter was a bit browned.. Then added the lemon juice and poured over the fish. I found that the fish needed salt, otherwise it was just plain bland. Pretty good.. although I doubt I'll save this recipe because all you really need to know is how to make a lemon/butter/garlic sauce and bake fish with it. Thanks!

Really good. I only gave it 4 stars because I followed others' advice and omitted the veg. broth. If I'd added it, I have a feeling it would've been WAAAAY too soupy. It was perfect without it. Yummy!
