We love this recipe! My husband requests it frequently now, and I was surprised that I like it, too! The great this is that as long as you keep the broth & rice proportional, you can use whatever amount of rice or beans you have. (I often use up our leftover burrito beans using this recipe!)

Yum! My husband loves these almost as much as my chocolate chip cookies, which is a huge deal! I did use regular oats (not quick) since that's all we had, but I actually like them slightly chewy. Even though the recipe says it yields two dozen, I got almost 6 dozen large cookies out of it! That should last us a while - or maybe not!

What a great mix of spices! I love making this and throwing it on top of some fettucine alfredo. And my husband doesn't mind eating it! :)
