Pork Medallions with Dijon Sauce
Delicious. I I tripled the recipe and froze the leftovers. I added 1/2 tsp. of garlic to the sauce and served this with roasted potatoes. Loved it!

Best Ever Banana Bread
Delicious. I didn't want it too sweet so I used 3/4 cups of white sugar and 1/4 cup of brown sugar. I also added fresh blueberries and omitted the pecans. I think next time i'll add in walnuts. Great recipe!

Sausage Spanish Rice
This was a big hit with my hubby. I would definitely make it again! I didn't need to make any changes. I just added a few more spices (paprika, oregano).
