Bread and Celery Stuffing
This recipe was so easy and fooled my grandmother who always makes homemade stuffing with pork. She thought there was meat in the stuffing. I put my in the oven in a casserole dish. I didn't really measure everything (including the butter) and it still turned out wonderful. I think the poulty seasoning really makes the difference. On a note: I used wonderbread white bread and cut it up while it was still soft. I placed it in a pyrex dish and covered it with saran wrap and left it on the counter. Some cubes were harder and some softer but it worked out perfectly. I ended up using more chicken stock than called for but I added a little at a time. Super tasty!!!

Perfect Turkey
Wow!! Amazing is the best word for this turkey. This was our first time ever having Christmas with the whole family and our first time ever making a whole turkey. We made a few slight adjustments for taste. First, our turkey was 24lbs. We soaked ours in salt water for 2 days only because it wasn't defrosting. Second, we took a steak knife and made stabs in the white meat (like you would a potato) before adding any butter or spices. I guessed on the amount of butter. Third, we didn't have the fresh herbs so we only used a little salt, some pepper and dried parsley. We added the veggies and to the bottom of the pan we added cooking wine (white wine) and chicken broth. We ended up cooking the turkey breast side down for about 3 1/2 hours, flipped it and cooked it for another 2-2 1/2 hours. My mom and grandmother (both Italian) said it was the best turkey they have EVER had. My mother-in-law raved about it. 24lbs and 15 people later, there was a small amount of turkey left. I highly recommend this recipe. It won't disappoint!!!

Simple Southwestern Chicken Salad
I tweaked this recipe a bit to my taste. I did not follow the exact measurements. I used 3 breasts, a handful of chopped cilantro and about 3 celery stalks. I didn't have taco seasoning so I added salt, chili powder, cayenne pepper and paprika to taste to the mayo. I also added a dash of tapatio (hot sauce) and a squeeze of lime. It turned out excellent and is hard to stop eating. All the hot spices and tapatio can be adjusted to taste. I highly recommend the squeeze of lime juice. It adds a nice fresh flavor
