About this Cook
My husband is a pretty strict vegetarian, my sons are insistent that they are carnivores and I have many food allergies so finding foods we can all eat is a real challenge. I grew up on a farm so we butchered our own meat and ate it every meal so cooking and eating vegetarian for the last 15 years has been an adventure.
My favorite things to cook
I love soups. We eat soup all year long. I grill year round too. We live in the Mushroom capital of the world so I've discovered the joys of cooking with mushrooms of all sorts.
My cooking triumphs
I make a mean gefilte fish. It's a baked salmon recipe. My Matzo Ball Soup is eagerly anticipated by family every holiday. (which is interesting as I was not raised Jewish and was only introduced to these foods after meeting my husband) My husband can't live without my apple pie (Rome apples if I can find them, a little honey and cinnamon and a crust of whole wheat flour, butter and cream cheese).
My cooking tragedies
I tried to make a recipe with lentils using a pressure cooker. I learned the hard way that it is not recommended to cook lentils in a pressure cooker. It took me an hour of cleaning to get the kitchen back in order.

Portobello Penne Pasta Casserole
Wow! This is delicious. I just made it for the second time and made a couple of changes. I'm allergic to soy so I leave out the soy sauce and used a little veggie broth. I also used some asiago cheese along with the mozzarella. The first time I made it I felt it needed more moisture so the added veggie broth made a nice addition. My husband and I couldn't get enough of this one. I had leftovers for breakfast....I couldn't wait for dinner! Thanks for a great recipe.

Zippy Zucchini
Boy! did my husband like this one. I used Bisquick and also sauteed the onion first (we like it well cooked) and it was delicious.

Homemade Focaccia Bread
I substituted whole wheat flour for at least half of the flour and I used honey instead of sugar. It was terrific. It was perfect for the Basil Pesto Sunshine Sandwich recipe on allrecipes.com. My husband and I loved it!
