Shannon's Smoky Macaroni and Cheese

Reviewed: Jun. 15, 2011
I was so excited to try this as mac and cheese is one of my favorite things to eat. Add smoked gouda (my fav cheese) and I'm sold! Sadly, this fell short for me. The gouda overpowered everything else. I may try again, but cut back on the gouda and add more of the others. I followed everything exactly except I added a couple shakes of hot sauce instead of the cayenne.

Extreme Chocolate Cake

Reviewed: May 2, 2011
This cake is amazingly good! I made it for the hubs birthday as he is a LOVER of chocolate cake. I didn't use the frosting recipe as I ran out of time and had to use store bought. However, I didn't change a thing in the cake mix and it is WONDERFUL. I used Droste cocoa powder and I believe it made all the difference. Hershey's is ok in a pinch, but the Dutch processed is where it's at.

Buttermilk Pound Cake II

Reviewed: Apr. 7, 2011
Wonderful cake! I used the juice of 2 lemons to make sour milk (didn't have any buttermilk) and to add to the cake in place of the extract. Other than that, I followed the recipe exactly, except I completely forgot to add the vanilla extract. I couldn't wait for the cake to cool to try it. Then I made a glaze of lemon juice and powdered sugar to pour over the top. I personally think it was better without this. I will definitely make this cake again.

Baking Powder Drop Biscuits

Reviewed: Mar. 5, 2011
These were so good! I used butter instead of shortening and 3 tsps baking powder. Everything else I did was the same as written. Oh, except I baked in a 400 degree oven since it was cooking with my chicken at the same time. Will definitely make again!

Amy's Healthy Fruity

Reviewed: Feb. 19, 2011
I split all ingredients in half and omitted the milk powder. I used all frozen fruit, vanilla flavored Greek yogurt (way more protein than regular yogurt), a bit more OJ, and a little bit of 2% milk to thin it out a bit. SO GOOD I drank it all myself!

Mediterranean Lemon Chicken

Reviewed: Feb. 16, 2011
Very good and so fast for a great weeknight dinner. I used boneless, skinless chicken breasts and baked for 25 minutes at 400. Also had to use Italian seasoning as I was out of oregano and didn't know it dangit! Also added a splash of white wine to the dish for some added liquid. Just eyeballed all amounts. So good and will make again.

Mom's Zucchini Bread

Reviewed: Feb. 15, 2011
I was only making one loaf, so I cut everything in half. Did make a few changes based on reviews. I used 2 eggs, 1/2 cup oil, 1/2 cup applesauce, 1/2 c sugar, 1/2 cup lite brown sugar, and I didn't measure my zucchini. Just shredded 2 small/medium ones and used all of it. I do wish I had used a bit more sugar as I would like it a bit sweeter. Other than that, it's very good and moist. I also left out the nuts. No reason other than I just didn't feel like using them. I will make again, but add a bit more sugar.

Quick and Easy Chicken Noodle Soup

Reviewed: Feb. 2, 2011
This was my first try at chicken noodle soup and it was so good. Figured with it being 16 degrees outside and having a killer sore throat, this was the perfect thing to make. I didn't measure exactly. I used double the amount of veggies. Diced up uncooked chicken and cooked along with all veggies including carrots with some garlic and s&p. Used a 48 oz box of chicken broth and a 32 oz box of veggie broth and added 1/2 tsp dried thyme. I also cooked my noodles separately. So easy, so good, and really hit the spot. Thanks so much!

Rosemary Lemon Grilled Chicken

Reviewed: Dec. 20, 2010
I too used olive oil instead of butter. Used fresh rosemary from my garden and 4 cloves of garlic. This was really good! Grilled in my grill pan on the stove. Easy, simply, yummy flavors. For the review before me, you always want to take your rosemary off the stem. Maybe you just used too much. It can be overpowering. To ANGELLACHELLE, will be using again. Thanks so much!

Charley's Slow Cooker Mexican Style Meat

Reviewed: Nov. 11, 2010
So good! I also used the review by Impish to assist in this recipe. I used a 3 pound chuck roast, followed the recipe almost exactly. Only changes I made was to add 1TBS chili powder and 1 1/2 tsp cumin and only 1/2 tsp cayenne since my daughter was eating this too. I used Tapatia hot sauce, yum. Cooked for 8 hours on low, then removed and shredded beef, then returned to crockpot for another 1 1/2 hours. Served on flour tortillas with shredded cheese, cilantro, and avocado. Oh, I also added about a cup of water with some beef bouillon. A cup was too much. Next time will only do 1/4-1/2 cup.

Peanut Butter Cup Cookies

Reviewed: Oct. 27, 2010
These are the prettiest cookies I have ever made. I followed the review by RETROGIRL35. I froze my peanut butter cups and while the cookies were baking I unwrapped them. I had to bake my cookies for 10 minutes. Let them cool in the pan for 5 minutes then pressed in the peanut butter cups. Then put the whole pan in the fridge for 10 minutes. They pop out easily and look wonderful! I used a mini muffin tin that has 24 cups in it and ended up with 45 cookies. I used my small cookie scoop to make them all the same size. My daughter LOVES them. This from the child who says she doesn't like peanut butter cookies. I didn't tell her there was peanut butter in the cookie itself. buaaahahahahah!!

Lemon Sugar Tea Cookies

Reviewed: Oct. 21, 2010
After reading several reviews I made just a couple additions. I added 2 tsps lemon extract, the zest of one lemon, and the juice from one lemon. It was perfect. I couldn't imagine leaving it out. Seems it wouldn't have much lemon flavor. Or maybe we are just lemon nuts. :) I didn't have any parchment and just assumed it was stated to use for clean up purposes. I learned with my first batch why it needs it. My cookies stuck to the pan. No biggie, just sprayed the pan with Pam for the remainder. These are very delicate cookies so be gentle with them. Slightly crunchy on the outside and chewy on the inside. Use a cookie scoop for sure and rolling in sugar makes them very pretty and yummy. Will definitely make again.

Restaurant-Style Buffalo Chicken Wings

Reviewed: Oct. 3, 2010
Perfect 10! The absolute key is the refridgeration. DO NOT skip this step. The flour mixture is so versatile, but I stuck to the recipe other than adding a touch of garlic powder. My sauce I doubled since I made more than 10 and did a higher ratio of sauce to butter because we wanted SPICY! Used Frank's Red Hot Buffalo Sauce. Thank you so much for this recipe! I have a very happy husband right now!

Jumbo Breakfast Cookies

Reviewed: Sep. 29, 2010
Although I love the versatility of this recipe, it just didn't work for us. Based on several reviews, I tried a few things. I used Crispix cereal, I do not recommend this. They got hard and chewy. I added honey, applesauce, pecans, chocolate chips, no raisins, wheat germ, half all-purpose and half whole wheat flour, half white and half brown sugar, and milk instead of water. Not only are these not good warm, they need to be FULLY cooled before they really taste good. I tend to slightly under bake my cookies, but it's not recommended with these. I halved the recipe and used an ice cream scoop that is less than 1/2 cup and still ended up with a lot of cookies. Don't think I'll be making these again.

Fluffy Pancakes

Reviewed: Jan. 4, 2010
Only change I made was I used butter in place of the shortening. SO GOOD! I couldn't believe how thick they were and they looked like they were going to be really heavy. I was pleasantly surprised at how light and fluffy these were. I used a ladle to get them onto the griddle so my batch only made 7 pancakes, but for only the 3 of us it was perfect amount. This will be a staple in our house and no more box mixes! For those who say the batter is thick, let it be thick. Makes for thicker pancakes. Just be sure to cook at about a medium heat so they cook all the way through and not burn.

Baked Teriyaki Chicken

Reviewed: Nov. 12, 2009
SO good! I doubled the glaze, used rice vinegar, cut the sugar in half, and fresh ginger. Shortened the baking time by 10 minutes. I used half thighs and half chicken breasts. No surprise the breasts dried out a bit, but the kids loved it! Will definitely make this again and again. Thanks so much!

Almond Biscotti

Reviewed: Oct. 10, 2009
Just got done making these and I'm so excited! I didn't change anything other than toasting my almonds. These are so good! For those that complain about the dough being sticky, water your hands while you are working with the dough. The only thing I will do different next time is not put a full 1/4 C sugar on top before baking. Makes them a bit too sweet. After they cool I'm going to dip in chocolate. Can't wait for coffee tomorrow morning!
