Absolute Mexican Cornbread
I was out of chiles the last time I made this, so I substituted Chipotle Peppers in Adobo Sauce. I used 4 of them, diced, but less would work if you don't like that much 'heat'. The combination of sweet, smokey and spicey was fantastic.

Better Help for Hamburger
I seasoned the ground beef with Worcestershire sauce and grill seasoning to add some additional flavor. Then I removed the browned ground beef from the pan and cooked the potatoes, peppers and onion in the drippings until the potatoes were tender (adding a couple cloves of minced garlic to the mix). I used mozarella instead of cheddar (only a half cup or so) and the kids couldn't get enough!

Cream Cheese Apple Muffins
I agree with the other reviewers who thought the muffins needed some spice. We added lots of cinnamon, some ginger and fresh nutmeg. We also added raisins and the muffins were quite tasty when warm from the oven. I also took the earlier advice and cut back the baking powder to 1 tsp. The yield was about 18 muffins from one batch.
