Chipotle Peach Salsa with Cilantro
The salsa was good and a nice change in flavor. I was not very keen on the flavor initially, but I let it marinate a bit and the flavors came together yet kept their own distinctive taste. I'd definitely recommend this to anyone looking to try something new.

Chicken Enchiladas V
The enchiladas were delicious and easy! I did add a few things to bolster the flavor. To the chicken breast mix, I added 1t. cumin and 2t. taco seasoning. To add a little flavor variety, I created 4 regular enchiladas and 4 spicy. For the regular, I added chopped tomato into each tortilla with a sprinkle of cheese. And for the spicy, I added chopped chipotle peppers in adobo sauce with a sprinkle of cheese. After rolling each tortilla and tossing the cheese on top, I sprinkled fresh chopped cilantro and tomato. The flavors really came together and tasted great.

Chicken Tortilla Soup V
The soup was very good. However, I did make a few changes to spice it up and keep it relatively healthy. I rubbed the chicken with taco seasoning and let it marinate over night. Next, I steamed the chicken breast in the oven by creating a closed foil pocket. This allowed me to omit the oil. I also added 2t. of garlic salt and 1t. of red pepper to the soup for additional flavor.
