Country Green Beans

I followed others' advice and used chicken broth instead of water. I did not have fresh garlic or onion, so I substituted garlic powder (1/8 tsp) and minced onion (about 1 tsp) per another recommendation. I also used frozen green beans. They were great! Lots of compliments.

Oatmeal and Wheat Flour Blueberry Pancakes

These were pretty good. I left out salt, used skim milk with some vinegar, all wheat flour, added some cinnamon and vanilla, and doubled up on fresh blueberries. They were a bit tricky to cook, as when I flipped them when the first side was perfect brown, blueberries and mix went flying.

Burgundy Pork Tenderloin

This was great! Even my 2 year old had 4 helpings! I left out onions and celery (don't like them) and used 1 cup burgundy cooking wine and 1 cup beef broth in place of 2 c red wine.

Chicken Tetrazzini I

Got lots of compliments! I left out mushrooms but substituted 1 can cr mush for a cr chx. Upped the noodles to 16 oz. Only change for next time would be to add a little pepper, or maybe some peas and carrots. I also baked at 350 and topped with Italian breadcrumbs.

Honey Pork Oriental

The meat and sauce was excellent. I doubled the liquid per other reviews, and cut back on garlic salt (used powder). I had to spoon some liquid off after browning the pork. I don't like peppers or onions so left them out, but added water chestnuts. Next time, I would omit chestnuts and carrots, and serve broccoli and carrot medley on the side. I would also cook the rice directly in the sauce, or let it soak in the rice overnight and eat as leftovers.

Southern Praline Pecan Cake

I followed advice of a few others. Left maybe 1/4 of the icing tub out of the mix and then microwaved it briefly to make a glaze out sorts at the end. Also cut oil down to 1/2 cup. We wanted to eat it before cooled, and I had no trouble cutting it, although it did crumble when trying to take bites. Yummy, though!

Grilled Brown Sugar Pork Chops

Great dipping sauce! I have grilled and baked this recipe. With baking I brushed a little of the glaze on for last 5-10 minutes and cranked the temp up to about 450 and it added a little extra flavor

Microwave Tater-Tot Casserole

This was easy and pretty tasty. I had some ingredients to use up so I did shredded hashbrowns and velveeta instead of tater tots and cheddar, and doubled the sour cream. I didn't have cr chx with herbs, so I added pepper, basil, oregano, garlic salt, and minced onion to plain cr chx soup. With the cheese and ham I probably could have done garlic powder--it got a little salty. Plan on taking more like 20 min to cook with stirring about every 5 min.

Pineapple Orange Pancakes

These weren't bad. I didn't have buttermilk but had 1/2 c half and half to use up, so I used that with some regular skim milk and added just under 1 tbsp of vinegar to accommodate. I used crushed pineapple and think next time I would not drain so carefully as the batter was a little thick.

Not bad. Skipped the egg white and seeds, added pepperoni. Next time may add some pizza sauce, either poured over the top with some mozzarella as a main dish, or to dip with appetizers

Mexican Shepherd's Pie

I layered black beans (can rinsed and drained) and the cheese on top of the corn before the corn muffin. I only used 1 box of corn muffin mix, but 2 are definitely needed for full coverage (if I had another box at home I would have mixed it up--instead I just had corn muffin "blobs" covering the cheese). I also dumped the whole can of tomatoes in (juice and all) and think I should have used less than 3/4 cup water with doing that, since it took forever to evaporate, and I still had some runny casserole in the end. Tasted great, though!

Basil Cream Chicken

I didn't have fresh basil so I used 2 Tbsp dried. Probably could do slightly less next time. I used fat free half and half. The sauce was a little thick, but I stirred it in with egg noodles and spread some over the chicken. It was a hit at our house!

Butternut Squash Soup

I used 4 oz of low fat cream cheese and it was still rich, but great! I didn't use quite as much better as called for. I roasted the squash for about an hour at 350 with some olive oil, garlic powder, and pepper.
