Ham and Fresh Basil Pinwheels
I have found reading the reviews of a recipe so helpful before I make the recipe! I really enjoyed both making and eating this one. I used Tofuyan whole wheat wraps and they worked well with no tearing (they were at room temp). I used a jar of sun dried tomaotes in oil, dumped it in the food processor and added the basil (in my opinion, there is no such thing as too much basil). I really like beef with basil, so I used 2 slices of Healthy Choice Roast Beef on each roll up. They turned out great. Next time I will drain 1/2 of the oil from the tomatoes and I may skip/reduce the cream cheese. All in all, a terrific recipe.

Apple Cole Slaw
I have some neighbors that we potluck with often. ALL this slaw was devoured, and we usually don't finish anyone's dish (I guess we all make too much). I didn't have cabbage so I used a bag of that broccoli slaw. I mistakenly put in a bit too much brown sugar, but everyone liked it so I will do it that way again.

Baked Eggs
When I was searching for this recipe, I was really looking for an "idea" that I could expand upon, using the ingredients I had. This worked great. The changes I made were: 1. I used individual ramekins so each brunch guest had his/her own dish. 2. I put some cubed leftover garlic bread in the bottom of each dish. 3. After pouring in the eggs, I added a small handful of canned mushrooms. 4. I baked them in a 350 oven, and then broiled them to finish with a nice brown top. Everyone loved them. I think the combination of the eggs and the evaporated milk worked really well. Next time I will try some onions in it.
