Black Bean And Corn Salad II
SO good! I've made it twice in the last week already, with and without the cilantro, and everyone loves it both ways. I use about a teaspoon of garlic powder in the dressing along with more cayenne pepper than called for, and a bit of kosher salt to balance the flavors instead of 2 chopped garlic cloves.None of us like to bite into even a small piece of raw garlic. :^) This recipe is definitely a keeper, it is tasty, healthy and a good way to get your veggies.

Creamy Cucumber Gelatin Salad
FABULOUS! I wanted a more savory than sweet recipe as a side dish with the meal, and this really fit the bill. The ingredients sound strange together, but the end result is so good, even the kids gobbled it up. I used sugar free lime jello, "lite" miracle whip, and full fat cream cheese. Because I love the taste, I also added about a tablespoon or so of fresh dill and everyone loved it. Has a fresh cool flavor on a very hot day. Definitely will make again, I am going to try with lower fat cream cheese to make it a little more healthy.

Strawberry Fluff
I had raspberry sugar free jello on hand, as well as fresh raspberries, low fat cottage cheese. Made it for a family party last night, and there is none left -the kids especially loved this! Will try again with strawberry/fresh strawberries, and other fruits and SF Jello flavors this summer too. GREAT recipe, although a little sweet for my taste.
