Easy Mexican Casserole
I modified the recipe quite bit – added a packet of taco seasoning while browning the meat, used black beans and a can of diced tomatoes I also omitted the black olives and green onion as well. Overall it came out good, but definitely nothing special. The consistency was more like a dip than a meal. The tortilla chips added nothing to the flavor – just empty calories as I see it. I’d much prefer to eat the dish with chips after it’s done cooking so you can actually taste them. Makes a lot of leftovers which is nice.
