Party Pinwheels

I liked these but didn't love them. I actually thought there was way too much of the cream cheese mixture for my taste. I really liked the crunch of the veggies in these, though, and liked how easy they were to prepare!

Ali's Greek Tortellini Salad

The flavor of this is wonderful, and it is a surprisingly filling salad. My only suggestion is to make a little extra dressing, as the tortellini does soke up most of it while it's chilling in the fridge. Excellent with french bread.

Taco Soup VI

This is very similar to a version of Taco Soup that I make quite often. I usually substitute one 15 ounce can of Mexican stewed tomatoes for the larger can of crushed tomatoes, and use only one packet of taco seasoning. This is excellent garnished with tortilla chips, sour cream, cheese, and green onion!

Chocolate Trifle

This was WAY too sweet for us, but I think it could be excellent with a few changes. Next time I'll try either using fresh whipped cream instead of the whipped topping, or use regular milk in the pudding mix instead of condensed milk (skip the water). It needs something to cut the sugar! My husband loved it, though!

Rosemary Ranch Chicken Kabobs

These were excellent. Flavor was wonderful. I ended up marinating them for about 4 hours and they turned out perfect! Made a little extra marinade to brush on as they were grilled.

Peach Crisp III

Very good. I added 1 cup raspberries (only had 4 cups of peaches). Next time, I'll use firmer peaches. Added some sugar and flour to the fruit mixture to sweeten up the berries and make it less juicy. Ended up being a bit too sweet (5 tablespoons of sugar) and wasn't juicy at all (2 tablespoons flour). Also left out the nutmeg and allspice -- didn't have any.

Old Bay® Shrimp Fest

The flavor of this was really good. I added two fish fillets (cubed), left out the can of beer, and cooked the corn a bit longer and the potatoes a bit less than suggested. The potatoes were still overdone......either use larger pieces or whole small potatoes. Half the recipe was still A LOT of food.

California Chicken

Grilled the chicken first with the onion powder. Did not add the salt and pepper, but I think it needed it. Next time, either marinate or add more seasoning. Overall, it was good. Would be better as a chicken sandwich.

Banana Banana Bread

Added 4 bananas and 1 peach (didn't have enough bananas). Also added cinammon and vanilla, and chopped pecans on top. This is by far the best banana bread I have ever had!

Apple Enchilada Dessert

I made this for a Mexican potluck lunch and it was FANTASTIC. So easy and good, but people think it's a lot more complicated than it is. I will definitely make this again. Was great with vanilla ice cream.

This was good, not great. It would be best with a richer main course, I think. Overall it was a bit too vinegary for me. The flavor of the marinade was just a little off -- needed something else, not sure what.

African Peanut Soup

This is excellent -- one of my favorite soups. I make a big pot of this and my husband and I eat it for several days. It's a unique flavor, but it really grows on you. Excellent with crusty bread. I usually add a little extra peanut butter.
