Slow-Cooker Chicken Tortilla Soup

I loved this! Like others, I just put the chicken breasts in raw, frozen in fact, and removed to shred when the soup was nearly done. Also, added lime juice prior to serving. That added the perfect touch. I put the leftovers in the freezer that night and the following week warmed some up on a leftover night and it tasted just as good, if not better! It's making me hungry right now just thinking about it.

Crunchy Bagel Chips

I made these to use in Chex Mix. They were so good I could hardly keep from eating them before I could get the Mix made. I used onion flavored bagels and garlic powder (rather than salt) with unsalted butter. (I'm not a big fan of salt.) It's also a fun recipe to make with the kids; my 20 mo loved painting the butter on the bagel pieces.

Mary's Meatloaf

This will be the meatloaf recipe I use from now on. It was easy and very delicious. I took the advice of some other reviewers and used oatmeal instead of bread (it just sounded better to me) and I put it in a bigger pyrex dish and put quartered potatoes around the perimeter of the loaf. Very tasty!

Heavenly Angel Food Cake

This is a great recipe. I love vanilla so I used 2 tsp rather than 1 1/2. I also used a bundt pan. The cake turned out delicious and light with a wonderful taste that stands alone though I used mine as strawberry shortcake at my husband's request for his birthday. This will easily be our dessert of choice this summer.

Frog Eyed Salad

I used this recipe the first time I ever made frog-eyed salad. It was a hit at the bbq we went to. The next time we were invited back they requested that we bring this salad. It may have even been the reason we were invited ;)! Each time I made it I was not able to refrigerate for 8 hours for one reason or another. Both times I put the bowl in the freezer the morning of and stirred every 15 minutes until it was chilled through and not quite freezing to the side of the bowl. Then I refrigerated and added the rest of the ingredients right before we left for the bbq.

No Bake Peanut Butter Bars

This recipe is similar to one we used all the time growing up. We use 1 c. peanut butter, 1 c. granulated sugar and 1 c. light karo instead. Also, we don't add the peanut butter until after the mixture has come to a boil and been removed from the heat. And we use 6-8 cups of rice krispies. The key to keeping them from crumbling is "proper compaction" as my father would say. Then we melt the milk chocolate chips directly on top of the bars using a hair blow dryer. I know that's really odd, but that's how it's done at my house. Put in the freezer for 20 minutes to properly set.

Mom's Good Cinnamon Rolls

These are great! I did make them into rolls rather than knots. I also followed the advice of others and increased to 1 c. sugar, 1 c. brown sugar and 3 tbsp cinnamon for the filling. They are huge cinnamon rolls; next time I'll probably split the dough in half and make 24. We'll see; the huge rolls are great also!

Simply Lemon Baked Chicken

I enjoyed the ease of this recipe along with the taste. My local grocery store didn't have lemons, oddly enough, so I substituted limes and I think it was still great. The chicken turned out very tender with the meat falling off the bone. Next time I think I might try basting with lemon/lime juice rather than water because I enjoy more than a hint of citrusy taste.

Ground Turkey Noodle Bake

This recipe is great. It is a tasty alternative to lasagne. I used part of a jar of spaghetti sauce rather than the cans of tomato sauce because that's what I had on hand. I loved it and will definitely add it to my regulars.

Chinese Chicken Casserole Surprise

I enjoyed this recipe. With Surprise in the Title my husband was a little apprehensive. It was good, but not the best. The celery should be a definite ingredient as I think it helped the texture. The almonds were great in it also; maybe that's the surprise... :)

Baked Teriyaki Chicken
