Chuck's Favorite Mac and Cheese
Definately a recipe worth a try. I too could have gone for a more cheesey taste. Like others I added milk, onions, used fiber enriched pasta and cut back on the bread crumbs. I also used freshly shredded parmesan in the noodle mix. My changes: I topped with a mix of canned parmesan and italian bread crumbs added some crushed red pepper flakes for a little kick. And to get some veggies into this, chop up some yellow squash, saute until just soft and add right in to noodle mix, tip from Rachel Ray.

Black Bean and Couscous Salad
cheap and delicious! i couldn't believe how much my boyfriend liked it too. i added some red wine vinegar and always use fresh lemon. when i bring left overs to work are so impressed but it is one of the most simple things to throw together. THANKS!

Scallop Scampi
I used a combination of frozen shrimp and scallops. I defrosted them in warm water and sauted them rather than bringing the mixture to a boil. I also topped the plates with fresh parmesan cheese which really made a difference. We skipped the parsley. Both my boyfriend and i were really impressed with the simplicity of the recipe and the overall taste.
